I decided this year that it is the year of entering sandwich contests, this being my second one. The Black & Decker Ultimate Sandwich Recipe Contest is like the last contest I entered between my blogging piers. This time, I had to come up with a hot sandwich instead of a cold one. I LOVE Hot sandwiches, because I love my bread to be nice and toasted. However, as I was exploring sandwich ideas, I decided to break away from the bread all together.
This is the Chicken Fajita Pita made in the Black & Decker convection countertop toaster oven. I love things that are easy so instead of making each part from scratch, I used what I had on hand.
Ingredients:
2 – 3 Red Bell Pepper (cut into strips)
1 lb. Pre-cooked Frozen Fajita Chicken Strips
1 can Enchilada Sauce
3/4 Cup Cheese (separated)
Sour Cream
Fresh Pita Bread
Directions:
Use the Black & Decker convection countertop toaster oven to heat up the chicken according to the directions on the back of the bag. (You can always cook your own chicken too. Then you would have to use the skillet, cut the chicken into strips, season with salt and garlic and brown the meat making sure it is done all the way through. But like I said, quick and easy for me)
Set the temperature on the Black & Decker convection countertop toaster oven to 400 degrees. Gently sprinkle the bell peppers with olive oil place on the cooking sheet and cook the peppers for 8 – 12 minutes depending on how crunchy you like your peppers. I like mine softer.
Heat up the Pita Bread at 350 degrees for about 5 minutes. It comes out really soft and warm.
Pour the Enchilada sauce into a sauce pan on the stove. Heat up until boiling then add 1/2 cup of cheese. Stir until cheese has melted until the sauce then simmer on low for 2 minutes stirring occasionally.
Assemble your sandwich. Add the chicken, bell peppers, sprinkle with remaining cheese, pour cheesy enchilada sauce over both and close your pita bread into a sandwich. Garnish with sour cream.
Black and Decker will be selecting 4 –5 finalists out of the 20 or so bloggers that come up with an original recipe. They will recreate the sandwiches, taste test them, and finally select the grand prize winner. The grand prize winner will receive a $1,000 cash prize and have their recipe professionally photographed in a nationally distributed back-to-school themed feature this summer. I’m so glad it’s not a voting contest, I hate begging you guys for votes.
