It was Jai’s birthday on Monday, and every year, I serve him peanut butter and jelly sandwiches. When I was growing up, my family had a tradition of picking whatever meal you wanted for your birthday dinner, so when I first met Jai I asked him what his favorite food was so I could continue that tradition. He replied, “PB&J sandwiches“, so I’ve been making them on his birthday every year since. For his 40th birthday party, I even made a giant table full of different types of PB&J sandwiches and canapés for our guests!
This year, I picked up a few boxes of Smucker’s Uncrustables Sandwiches. Smucker’s surprised me a with a fun package of products over the holidays that included free Uncrustables coupons, and I knew right away these would be perfect for Jai’s birthday. Having pre-portioned little sandwiches means that we could work a birthday treat into our diet for the day and still keep it within our calorie goals. That’s why I put candles on one of the sandwiches and served it as Jai’s “Cake”, so we could enjoy in moderation without blowing our goals. It was fun and very tasty!
