Pearl Quinoa Banana Bread Pudding
Recipe by Jerilyn Korver (Sherman Oaks, CA)
Ingredients:
1 cup cooked Alter Eco Royal Pearl Quinoa
1 cup almond flour
1 1/2 tsp baking powder
1/2 tsp salt
1/3 cup 100% liquid egg whites
1/2 cup unsweetened vanilla almond milk
1 tsp pure vanilla extract
1 tsp ground cinnamon
1/4 tsp ground nutmeg
3 ripe bananas
1/4 cup 100% pure maple syrup
1/4 cup walnuts, chopped
Directions:
1. Preheat oven to 350 degrees F. Lightly butter or oil a 1 1/2 quart baking dish. 2. Mash one banana, chop a second and reserve the third to slice for serving. 3. In a large bowl combine egg whites, mashed and chopped banana, cooked quinoa, almond milk, vanilla extract, maple syrup, cinnamon and nutmeg. Add salt, baking powder and almond flour, stirring just until combined. 4. Pour batter into prepared dish and bake for 30-35 minutes, or until toothpick inserted comes out clean. Serve warm or chilled topped with remaining banana sliced, chopped walnuts and extra maple syrup, if desired. Serves 4-6. Delicious topped with fresh blackberries or Alter Eco chopped dark chocolate bar!
i have never tried quinoa but have heard that it has health benefits. i love banana bread, so this sounds really good!
banana nut bread is my favorite … from looking at the ingredients looks like it is healthier too! (Never would have guessed to use quinoa in the recipe)
