My husband had his birthday last month, HA! I can’t believe it took me over a month to share this fabulous recipe. We used the recipe from the Southern Plate cookbook. You can also find the recipe and print it from her website just look for Apple Dapple Cake. We took the photos while we were cooking with the kids. Now, when my husband said he wanted an apple cake for his birthday at first I thought, oh good, I won’t like it so I’ll only have one piece and he can eat the rest. Oh man, this cake is so good, I was so wrong. I had a hard time not eating it in the middle of the night and for breakfast the next day.
The kids always have fun baking with dad.
It’s a learning experience.
And a delicious result.
Apple Dapple Cake Recipe
3 cup all purpose flour
1 teaspoon salt
1 teaspoon soda
1 cup pecans, chopped
1 cup vegetable oil
2 cup sugar
2 teaspoon vanilla
3 cups raw apples, peeled and chopped fine
1 cup packed brown sugar (for sauce)
1/4 cup milk (for sauce)
3/4 cup margarine(1 -1/2 sticks) (for sauce)
Mix oil, sugar, eggs and vanilla. Sift together flour, salt, soda. Add to first mixture. Fold in pecans and apples. Bake in tube pan at 350 for 1 hour.
For the sauce, mix and cook ingredients 3 minutes after it begins to gently boil, stirring constantly. Pour over hot cake while cake is still in pan. Let cake cool completely before removing.
You have to use the sauce! It’s a MUST!
