1 onion, chopped
1 package Isernio’s Premium Italian Chicken Sausage
4 cups chicken broth (Making your own is easy; you might be surprised.)
5 large red or Yukon potatoes
¼ bunch fresh kale, washed and chopped
¼ cup cream

1. Cook sausage and onions until meat is cooked throughout over medium high heat in soup pot.

2. Add broth and potatoes. Boil until potatoes are tender.

3. Add kale and boil 1 minute. Remove from heat and stir in cream.

This is my homemade chicken stock:

I got the Isernio’s Sausage from Costco in a 3 pack; I think each

package held a pound of meat. I really like that Isernio’s is local to me, here in Seattle. Inside you’ll find: chicken, salt, vinegar, lemon juice concentrate, fennel, water, spices (including pepper), bell pepper, dehydrated garlic, parsley, natural flavor. This particular package is gluten free. I love it and have used all three packages in this soup since purchase. I need to return to Costco and see if they have more; I love it! The item number is #7040, hope you can find it in your area and I hope I can still get it in mine too!

If you can’t get it at Costco, here is a Isernio coupon for grocery store purchasing. You can also aquire a coupon from “Liking” Isernio on Facebook, which you would naturally do anyway, right? (NOTE: These are two separate coupons for different items, so you’ll want to do both – visit their site and Facebook page.) You can also follow Isernio’s Sausage on Twitter @IsernioSausage … maybe more deals will pop up!

Disclosure: I just truly love this product. I was not approached by Isernio’s or their PR company to create this recipe or “review”. No samples were provide or compensation.

Campbell’s Select Harvest Soup Gift Basket Giveaway

I love eating soup. I’m not a fan of sandwiches, unless they are hot and let me tell you I’m lazy when it comes to getting out the griddle or a pan to heat up my turkey and cheese. So I usually go with leftovers or soup. YUMM, a bowl of hot soup on a cool day, and every day here in the Pacific Northwest is a soup day to me. Would you be surprised if I told you my favorite soup brand is Campbell’s? Well, it is. I’ll buy other brands when I can get them next to nothing on sale, but for all other reasons I go with Campbell’s.

Campbell’s contacted me about two weeks ago asking me to try out Campbell’s Select Harvest Light soups. Usually, I shy away from things that say “light” “low fat” “diet” because they lack the flavor right? Well, I learned something new today. With 11 different Select Harvest Light varieties, I found quite a bit of flavor and enjoyed my “light” soup today.

Campbell’s Select Harvest soups are 100% natural, meaning they contain no artificial flavors, color or preservatives, do contain real ingredients and no MSG. Varieties like Minestrone with Whole Grain Pasta and Savory Chicken with Vegetables that have 80 calories or less, you can enjoy a great tasting bowl of soup that is also a smart decision for your waistline.

Research has shown that when people eat soup before a meal they are more likely to eat less at that meal overall, and helps you feel full longer because of the higher water content. Now, the 2010 Dietary Guidelines for Americans, the new government recommendations on what people should eat, recognize the power of soup as well! The report states that “soup, particularly broth or water-based soups, may lead to decreased calorie intake and body weight over time.”

So enjoy a bowl of soup with me.
