I just entered a really fun giveaway and I wanted to share it with you. Jimmy Dean is hosting a fun campaign and I couldn’t resist entering myself. The video is super short. All it says is how I get my kids ready. They need a good night sleep, excitement from mommy and a good breakfast to start the day. Maple Sausage Corn Bread Pudding Recipe

I’ve been trying to widen our meal plan using ingredients that we know and love. I’ve just been tired of making the same things over and over again. So, I checked out Jimmy Dean’s Website for recipes and found the Maple Sausage Corn Bread Pudding Recipe. My husband was a little bit leery because the recipe called for onions, so I told him to trust me it would be delicious. It came out wonderful, of course with my own modifications.

Sausage Corn Bread Pudding

Here is my version of Maple Sausage Corn Bread Pudding Recipe

Ingredients:

1 pkg of Jiffy Corn Bread Mix (or 8.5 ounces of your choice corn bread mix)
1 tablespoon butter
1/2 pkg Jimmy Dean Maple Flavor Pork Sausage Roll (8 ounces) cooked crumbled and drained
1 1/2 cups frozen corn cooked
4 eggs
2 cups half-and-half or whipping cream
1/2 teaspoon salt

Directions:

1. Preheat oven to 400 degrees. Prepare muffin batter according to package directions, pour into lightly greased 8-inch square baking pan. Bake 20-25 minutes or until lightly browned. Cool completely.

2. Cut cornbread into 1-inch cubes; place in 13×19 inch baking pan. Bake 5-10 minutes or until golden brown. Transfer lightly greased 2-quart casserole.

3. Melt the butter and pour over the bread cubes, then top with corn and sausage

4. Beat eggs, half-and-half, salt in small bowl with wire whisk until well blended; pour over ingredients in casserole. Gently press bread cubes into egg mixture until completely covered. Cover with foil.

5. Bake 30 minutes then uncover and cook 10 more (make sure the knife comes out clean) Let stand 10 minutes before serving.

Hot Topics Jimmy Dean The Sun & Mom Start & Jimmy D’s Giveaway

At BlogHer 2010 I met with Jimmy Dean’s The Sun. The sun is a big golden light that all the planets revolve around and he has all kinds of information and knowledge about breakfast. The Sun commercials are quite humorous and when I tell people that I met the sun, they laugh! Not because it is a crazy thought that I met The Jimmy Dean Sun, but because internally they are remembering one of those commercials.

 

 

I had a lot of fun talking to the Sun, we chatted for about 30 minutes while the camera men were getting set up. I was most intrigued by the fact that he lived in Washington State for a period of time.

At BlogHer everyone had the opportunity to taste new Jimmy D’s breakfast foods. We were some of the first people to ever try them. They are lower in calories than you would expect any out of the box, into the microwave breakfasts could possible be.

Toast GriddlerThese have 8 grams of protein, 6 grams of sugar and 8 grams of fat. They are french toast sandwiches with turkey sausage in the middle with only 210 calories. Remember that the sandwiches are bigger in size than the griddle sticks.

I tried both of these at blogher, and when I didn’t know how many calories were in them, all I did was have a bite. I was very worried about over eating while I was at the conference so I had a little bit here and a little bit there. I could have easily gotten away with eating the whole thing. After trying both samples, if I had to pick a favorite it would be the Griddle Sticks.

Celebrate the New Year Entertaining with Jimmy Dean Sausage Recipes #giveaway

Jimmy Dean is our family favorite brand of sausage. I always buy Jimmy Dean maple sausage for our family. It’s my husband’s favorite and I enjoy it too. It’s always the same quality. Delicious. Yesterday my husband made Sausage Corn Chowder and I’m really looking forward to having the left overs tonight for dinner. I’m so proud to have a husband that can cook when he is needed in the kitchen.

Jimmy Dean sent me some recipes to share with you. I’ve shared two of them, well I have two more to share with you as well. Jimmy Dean Sausage Spinach Stuffed Mushrooms

Jimmy Dean Sausage Spinach Stuffed Mushrooms

 

Ingredients:

  1. 1 pkg. Regular Flavor Jimmy Dean Pork Sausage, cooked, crumbled, and drained
  2. 1 pkg. (16 oz.) large fresh mushrooms
  3. 1 pkg. (10 oz.) frozen chopped spinach, thawed
  4. 1/4 cup grated Parmesan cheese
  5. 1 teaspoon olive oil
  6. 1 tablespoon Italian-style bread crumbs
  7. 1 tablespoon melted butter

Directions:

Preheat oven to 350 F. Remove stems from mushrooms; reserve for another use. Place mushrooms rounded side down in two greased 9" X 13" baking dishes. Drain and press spinach to remove excess liquid. In a large bowl, combine cooked sausage, spinach, Parmesan cheese and olive oil; mix well. Stuff sausage mixture into mushroom caps. Sprinkle with bread crumbs; drizzle with melted butter. Bake 30 minutes or until topping is brown and bubbly.

Serving size:

about 30 appetizers

Jimmy Dean Inside Out Sausage Poppers

Ingredients:

  1. 1 pkg. Regular Flavor Jimmy Dean Pork Sausage
  2. 4 whole pickled jalapeno peppers, drained
  3. 4 oz. (1 cup) pepper jack cheese, cut into 1/2" cubes
  4. 2 eggs, lightly beaten
  5. 3 tablespoons milk
  6. 1/4 teaspoon salt
  7. 1-1/2 cups seasoned dry bread crumbs

Directions:

Preheat oven to 375 F. Divide and roll uncooked sausage into 1 oz. meatballs. Press thumb into each ball, creating a small bowl shape. Use a knife to remove stems from jalapeno peppers. Slice in quarters lengthwise; remove seeds. Wrap one jalapeno strip around a cube of cheese; press into meatball. Work sausage back into a meatball shape, enclosing cheese and jalapeno. Repeat with remaining meatballs. In a small bowl, combine eggs, milk and salt; stir well. Measure breadcrumbs into a separate bowl. Dip each meatball in egg mixture, then in breadcrumbs to completely coat. Bake on a large non-stick baking sheet 10-12 minutes. Allow to cool on pan 5 minutes before serving. Discard any remaining egg and breadcrumbs.

Serving size:

12-16 poppers

Sausage Stuffing from Jimmy Dean

Ingredients:

  1. 2 pkgs. (16 oz. each) Regular Flavor Jimmy Dean Pork Sausage
  2. 8 oz. fresh mushrooms, sliced
  3. 1-1/2 cups diced onion
  4. 3/4 cup diced or coarsely grated carrots
  5. 1-1/2 cups diced celery
  6. 3 garlic cloves, minced
  7. 1 pkg. (10 oz.) frozen spinach, thawed and drained
  8. 2 teaspoons dried rosemary
  9. 2 teaspoons poultry seasoning
  10. 1 teaspoon black pepper
  11. 1 pkg. (15 oz.) herbed dry bread cubes
  12. 2 cups chicken broth
  13. 1 egg, lightly beaten

Directions:

Preheat oven to 325 F. In a large saucepan or stockpot, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink. Add mushrooms, onion, carrots, celery and garlic; cook 10-12 minutes or until onion is translucent, stirring frequently. Transfer mixture to a large bowl; add remaining ingredients and stir well. Pour into a buttered 4-quart casserole. Bake covered for 60 minutes.

 

 

Serving size:

Makes 10-12 servings

Jimmy Dean Stuffed Squash Recipe

I have yet to try this since I’m stuck in bed for a few more weeks but it sure looks tasty and healthy.

Ingredients:

  1. 2 medium acorn squash
  2. 1 pound bulk spicy pork sausage
  3. 1/2 cup chopped onion
  4. 1 egg
  5. 2 tablespoons milk
  6. 1 cup fresh baby spinach, finely chopped
  7. 1-1/2 cups soft bread crumbs
  8. 1/2 cup dried cranberries

Directions:

Cut squash in half; remove and discard seeds. Place squash cut side down in a microwave-safe dish. Cover and microwave on high for 10-12 minutes or until tender. Meanwhile, crumble sausage into a large skillet; add onion. Cook over medium heat until meat is no longer pink; drain. In a large bowl, beat egg and milk; stir in the spinach, bread crumbs, cranberries and sausage mixture. Turn squash cut side up. Stuff with sausage mixture. Cover and microwave on high for 2-3 minutes or until a thermometer reads 160°.

A new survey conducted by Jimmy Dean shows that more than one quarter of Americans fail to eat a satisfying breakfast that keeps them satiated throughout the morning – leaving them feeling groggy, tired and distracted.  On busy mornings, too many of us eat on the run, filling up with sugary cereals, carb-loaded breads and other foods that actually leave us tired and hungry before lunch.

We have also found out that October is National Sausage month, and what better way to celebrate but with sharing recipes and food ideas.
