Janet and Greta Podleski: The Looneyspoons Collections Cookbook review

imageI love to cook and I don’t like to run out of creative ideas, but it happens once in a while and then I have to be rescued from the black hole of blankness when it comes to dinner ideas. Two sisters, Janet and Greta Podleski’s cookbook, the Looneyspoons Collection, is a perfectly funny, absolutely beautiful, and satisfyingly informational piece of literature that should never leave your kitchen counter because it just simply inspires to cook. Okay, I think there is no point of me circling around the fact that I love this book. These two women’s writing style, cooking taste, health consciousness and funniness is right up my alley. I received this book months ago and it is still sitting on my counter not only as a source of creative cooking ideas but as a casual read as well.

Greta and Janet have been cooking it up for a while and the Looneyspoons Collection contains better than ever mouthwatering dishes from them. These two ladies’ passion is to inspire people to cook, to actually purchase amazing ingredients and spend time in their kitchen and make delicious dishes that are wholesome and healthy. Now, this book does not only nourish your body, but it is so good for the soul too. Each page looks like this: with a silly title, funny cartoon, a delicious receipt with nutritional values, a ‘please-make-because-I-look-so-scrumptious’ picture, an inspiring or enlightening quote from someone random, and some tidbits of other information that will truly encourage you to think twice about what you put front of your family. For me, visual aspects are everything in a cookbook: I have to see a dish to want to make it, seeing just words are not inspiring. The Looneyspoons Collection is a joy to open with all the beautiful pictures and colors, funny cartoons and simple directions. If you are a person planning to make changes in your cooking style, or you want to learn new skill, this book will definitely not scare you off.

I want to think of myself as a health conscious cook and baker and I often find myself substituting, mixing, replacing and generally not following receipts to make each dish just a bit healthier. The Looneyspoons Collection does this for me. You mean I don’t need to calculate how much of the flour should I replace with wheat germ? To use white rice instead of brown, to cook whole-wheat pasta? Oh, I like that. Conventional dishes – the way your mother and grandmother made them – are still here, with a major healthy makeover that your waistline will be oh-so-grateful for. The ingredients are not fancy or expensive (I personally don’t even bother making a dish if I need more than two special ingredients that I don’t usually have at home) and the book will encourage you to really start reading labels to avoid harmful items that may have been a staple in your kitchen. I have cooked several dishes out of this book like the ‘Not Humdrumsticks’ ‘Pasta Point of No Return’ ‘Worth Every Penne’, FULLafel Patties’, ‘Better-Be-Good-To-Me Pancakes’, ‘Morning Glorious Muffins’ and the list goes on (and I think you get the humor from these titles too). Every one of them were super easy to make and even easier to eat. Seeing my family devour these new and delicious dishes is a simple joy to a Mom.

B is for Baking – 50 Yummy Dishes to Make Together

This fall, Sesame Street came out with what I think is an AWESOME cookbook, B is for Baking. Atticus has just now gotten to a stage where he can actually “help” in the imagekitchen and definitely wants to be a part of everything! B is for Baking provides so many recipes that have easy steps in them that really allow him, or any other little one, the opportunity to help cook! Yep, my (almost) 17 month old has now officially helped me cook in the kitchen!

The book features 50 delicious, nutritious, kid-pleasing recipes for breakfast, lunch, and dinner, plus snack time and special occasions. All of the recipe pages are colorfully designed with full-sized photos and detailed instructions that are sure to inspire kids to develop good eating habits while having fun in the kitchen at the same time! Not only does this book encourage kids to develop healthy eating habits, but it also encourages them to learn through counting, practice with shapes, and work together as a team.

Sesame Street teamed up with Susan McQuillan to write this children’s  cookbook. Susan is a dietitian,  cookbook author, and food writer who has contributed to magazines such as Woman’s Day, Family Circle, American Health, Prevention, and Cooking Light and has appeared on the Today Show and the Food Network.

Whether it’s Grover’s German Pancake, Rosita’s Beefy Enchilada Pie, Big Bird’s Veggie Quiche Squares, or Cookie Monster’s Pumpkin Pudding, you and your whole family will have a blast cooking with this B is for baking. The recipes are easy follow, contain ingredients that aren’t hard to come by, and make foods that are health, exciting and fun for both young and old.

Atticus and I worked on Cookie Monster’s Pumpkin Pudding and it turned out great! I will say that you need to pay attention to the quantities yielded because this recipe made way more than I thought it would. That wasn’t really a problem though because it was so yummy!

Since the holidays are approaching, keep this book in mind for any mom or grandma you know who loves to be in the kitchen. It would even make a great family gift! I definitely love my copy of this book and I think you will too!

Season of Giving Day 18: The Recipe for FEED[ing] Our Small World

I love to buy gifts. I especially love to buy gifts then they support a cause. Disney has released an It’s a Small World cookbook for children called FEED Our Small World. The recipes are a little complicated for a chef-in-the-making, but this book is great for a little family time cooking!

The books has 6 breakfast recipes, 7 lunch recipes, 7 dinner recipes, and 6 dessert recipes; as you can imagine these delicacies give you a taste of the world with recipes from France, Spain, Scotland, Belgium, Germany, Switzerland, Canada, India, Greece, Cuba, China, Thailand, Senegal, Italy, Japan, Indonesia, Morocco, Mexico, Ireland, Poland, United States, Jamaica, and England.

These recipes are fun and easy! Many of them have a lot of ingredients, so be sure to shop with your young chef before starting a recipe. I think then children help make a dish they’re more likely to try it, even if they don’t end up liking the taste. FEED Our Small World offers flavors from around the world, so your child can try all different kinds of flavors. This is a great book to base a play date or theme party around.

Tex-Mex Chicken Cutlets Recipe Family Circle Healthy Family Dinners

When it comes to the cooking in our home, my husband is the better cook. The guy is able to create the most amazing dishes with whatever we have on hand and barely has to glance at a recipe. I, on the other hand, must carefully follow written instructions. For this reason I’ve collected numerous cookbooks and recipe clippings from magazines.

The newest addition to my collection is the Family Circle Healthy Family Dinners. Flipping through the pages, I realized I really didn’t have any other cookbook quite like it. I have the typical family meal recipe books (quick prep, kid-friendly), but the majority of the healthy cookbooks I own are more for dieting adults. This collection is unique because there are over 200 recipes that can appeal to the whole family, while using healthier ingredients. Recipes include main dish salads, meat and fish, pasta, vegetarian, slow cooker meals and even dessert! Each recipe provides extended nutritional information including calories, fat/saturated fat, protein, carbohydrates, fiber, sodium and cholesterol.

clip_image004I decided to give Tex-Mex Chicken Cutlets a try since I had all the ingredients needed at home. Most of the recipes in this collection include a full page color picture, but this one did not, so I also thought it would be a good one to feature (plus no self-criticism if my creation doesn’t turn out as pretty as the pictures).

Prep was pretty easy, although it did take me longer than the 5 minutes the book stated. But remember, I’m only a part-time cook in my home! I chopped up the onion, minced the garlic and spread extra virgin olive oil in the pan to get things started. While these ingredients sautéed for a bit, I got the flour, chicken, salsa, chicken broth, cumin, red wine vinegar and corn ready for the next steps.

clip_image006After quick coating of flour on both sides of the chicken breasts, I placed these in the pan to cook for a few minutes on each side. When both sides had lightly browned, I added the salsa, broth, cumin, vinegar and corn and continued to cook for about 5 minutes. Now things really started smelling good! All I had left to do was throw in the rice, remove from the heat and let it all sit covered for about 10 minutes.

The overall cooking time for this recipe was pretty close to the estimated 10 minutes and with 10 minutes of stand time, I was also able to take care of clean up, set the table and cut up some fruit while the rice cooked.

clip_image008The kids and I sat down to a healthy meal that included some of their favorite foods: chicken, rice and corn. The salsa I used wasn’t spicy so it just added some color and a little flavor. My older daughter ate up every bite and asked to have some of the rice in her lunch the next day. My younger daughter, the picky toddler of our home, didn’t protest and ate most of her serving, so I consider that a success.

 

Here’s the recipe from Family Circle Healthy Family Dinners:

Tex-Mex Chicken Cutlets Recipe

MAKES 4 servings PREP 5 minutes COOK 10 minutes STAND 8 to 10 minutes

Ingredients:

1 tablespoon oil
1 small red onion, chopped
2 garlic cloves, minced
2 tablespoons all-purpose flour
4 boneless, skinless chicken breasts (about 1 1/2 pounds total)
1/2 teaspoon ground cumin
1 cup chicken broth
1 teaspoon red wine vinegar
1 cup bottled medium-hot salsa
1 (10 ounce) package frozen corn, thawed
1 cup instant rice

Directions:

Heat oil in a large nonstick skillet over medium-high heat. Add onion and garlic; sauté, stirring occasionally, for 2 minutes or until softened.

Meanwhile, place flour on a plate. Place chicken in flour to coat each side, patting off excess. Add to skillet; sauté for 2 minutes per side or until lightly golden. Add cumin, chicken broth, vinegar, salsa and corn. Cook about 4 minutes.

Remove from heat. Stir rice into liquid. Cover, let stand 8 to 10 minutes or until rice is tender. Serve with extra salsa, if desired.

When we try another recipe this week, we’ll need to make a grocery run as some of the items (low sodium broth, whole wheat quinoa and polenta) are not our usual staples. But given time and practice using some of these healthier alternatives, it should be easy to incorporate some of these ingredients into our other family recipes. I would love to be able to cook healthy naturally and I think Family Circle Healthy Family Dinners will be a great way to get started.

Chocolate Midnight Cookies Recipe

The other night my husband made cookies for me. Oh he’s a wonderful man that loves me so much because not only did he bake the cookies from a cook book that I needed to do a review. The new Entenmann’s Big Book Of Baking is a comprehensive collection of mouth-watering baked goods recipes. Each page has a full color photo of the recipe and I want to cook myself through the entire book.

Chocolate Midnight Cookies Recipe
Ingredients
  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg (lightly beaten)
  • 1/2 teaspoon vanilla
  • 1 cup all purpose flour
  • 1/2 cup unsweetened cocoa
  • 1/2 teaspoon baking soda
Instructions
  1. Preheat the oven to 350 F
  2. Spray your cookie sheet with nonstick spray
  3. Cream your butter and sugar until fluffy
  4. Add the egg and vanilla and mix until smooth
  5. Then mix in the flour, cocoa and baking soda
  6. Roll the dough into balls about the size of a walnut and space them apart
  7. Bake for 10 to 12 minutes
  8. Let cook on a baking sheet for 5 minutes and then transfer to wire rack to cool completely

The Do It Myself Kids’ Cookbook

It’s nice to have some extra help around the house. Get your kids involved … making sandwiches; snacks; salad, dressings and dips; desserts; and drinks. My kids love to cook with me and we cook a lot. I like that cooking not only teaches them a life skill but it also has its true roots in math and science.

My only problem is when I hear, “I can do it myself!” No worries now though. Get your kids (and yourself) The Do It Myself KIDS’ Cookbook by Laurie Goldrich Wolf from Downtown Bookworks publishing so they can take part in their diet and get some of the work off your back. With 45 recipes kids as young as 4 years old can follow, the fully-illustrated step-by-step directions can be performed without needing to read in order to create dishes that look and taste as yummy as the finish photos.

I had my 4YO help me make dinner by mixing together some Honey Mustard Dressing/Dip from The Do It Myself KIDS’ Cookbook. The whole book can be made with “Nothing Sharp, and Nothing Hot!” The simple dressing was featured as a dressing to salad for mom and dad, and a dip for a plate of the same ingredients for the kids. Added to the Honey Mustard we had spinach, tomato, carrots, apples, mushroom, and chicken.

We’re so excited to make something else from The Do It Myself KIDS’ Cookbook and can’t wait to share another exciting adventure with you! We have 10 bookmarks of recipes we’ll be concocting soon. imageI love to cook, and love to have healthy meals prepared for my family pretty much every night. We usually do something “out” once a week (usually a SUPER cheap hot dog or slice of pizza), but overall we are an eat at home family. Even my 10 month old is eating many of the same foods as my husband and I. The problem though, is that even the best laid plans can fall apart. When you think you’re going to be prepping dinner, the afternoon nap gets cut short. Or maybe you completely forgot a specific ingredient at the store, and can’t bear the thought of packing everyone up for a trip to the store. Maybe it’s just even that you don’t feel like cooking! Nights off are allowed! Well, that’s exactly what Make-Ahead Meals: 100+ Recipes for Home-Cooked Meals You Can Serve at a Moment’s Notice is for. This book has tons of recipes that you can make, freeze, and then pull out when you want a good, home cooked meal…well… at a moment’s notice! Sellers Publishing sent me a copy of this book to test out and review.

imageMake-Ahead Meals: 100+ Recipes for Home-Cooked Meals You Can Serve at a Moment’s Notice is full of recipes including starters, entrees, sides, sweets and sauces and salsas. The format of this book is wonderful. There are easy to follow icons to help you know how far in advance the recipe can be made: a sun for make in the morning, a calendar for making up to 1 week ahead, and a snowflake for the recipes that can be made and frozen. Always make sure that you read within the recipe though, because sometimes the calendar icon can mean just a 24 hour “make-ahead time”. There’s also a chef’s hat icon that lets you know there is a helpful tip later in the book. If you are planning to use this book, you should definitely check out the “Stocking the Pantry, ‘Fridge, and Freezer” section. Many of the recipes in the book contain some ingredients that you may not necessarily keep on hand. For example, portabella mushrooms and fresh flat leaf parsley were called for in the recipe I decided to try and took a special trip to the store to pick up. Some of the other features include a section of equipment and supplies that you need, a section with helpful tips and surprising food facts, helpful tips and information for cooking in general.

Overall, this book is a great source of ideas for meals you can pull out at the drop of a hat. Just remember to check the recipe you plan to use for any special ingredients that you don’t always keep on hand. I would also say that most of the recipes in the book are not necessarily “challenging”, but do take someone who is comfortable in the kitchen.

Last week I had the perfect opportunity to test out one of the recipes in Make-Ahead Meals: 100+ Recipes for Home-Cooked Meals You Can Serve at a Moment’s Notice. I was planning to stay busy outside all day on Friday and knew that would run into my usual dinnertime prep. I pulled out my conveniently sized cookbook and decided to try out Pork and Apple Pie. I had already looked this recipe over, and gotten all of the supplies I needed earlier in the week. Thursday night, I made our usual dinner AND took some time to make the Pork and Apple Pie. This recipe could be refrigerated for 24 hours or frozen until needed. I thought the recipe was really tasty, and so did my little one. My husband said that he must just be one of those weird people who doesn’t like pork and apple together. You can check out the recipe under the recipe section of Momstart. Cinnamon French Toast Casserole Recipe

Again, my neighbor said, you’re having dessert again. Yes, we’re having dessert again for dinner. We’ll stop having dessert for dinner when I finish cooking my way through the breakfast section of the KitchenAid Recipe Collection Cookbook . I love French Toast so I was really excited to try this, but it turned out to have more of a texture like a quiche than French Toast, maybe I didn’t add the right amount of bread, I didn’t have room for all of it so I left some of the bread out. You’ll find that I’m an imperfect cook that almost always gets the recipe wrong the first time I make it, and this one, I really messed it up. It looked nothing like the photo in the book. You should go out and get this cookbook, try this recipe, and tell me how you did!! (remember, this recipe is adapted, as I couldn’t find my apple peeler)Cinnamon French Toast Casserole

Ingredients:

1 large loaf French bread cut into 1 1/2 slices
3 1/2 cups milk
9 eggs
1 1/2 cups granulated sugar, divided
1 tablespoon vanilla
1/2 teaspoon salt
6 funny apples not peeled (get an apple corer and that’s how you make funny apples, my corer has lost it’s peeling blade)
1 teaspoon ground nutmeg

Directions:

Place the French bread in a 13 x 9 inch glass baking dish

Whisk the milk, eggs, 1 cup granulated sugar, vanilla, and salt in a large bowl until well mixed. Next, pour half of the mixture over the bread. Then pull the funny apples apart, or cut them in half and it will fall apart. Places the slices you now have over the bread. Pour the remaining half of egg mixture over the apples.

Combine the remaining 1/2 cup granulated sugar, cinnamon and nutmeg in small bowl; sprinkle over the casserole. Cover your creation and refrigerate overnight.

Preheat oven to 350 degrees F and bake uncovered 1 hour or until eggs are set.

Making Classic Fettuccine Alfredo

We’ve been craving home made Fettuccine Alfredo for a few months now, but I didn’t have a recipe for the Alfredo sauce that I was happy with until I received the KitchenAid Recipe Collections Cookbook. Once I saw their photo and looked at all the ingredients I knew it was worth trying. Making Classic Fettuccine Alfredo is more difficult than it looks. I overcooked my sauce so the cheesy sauce was on the chunkier side instead of creamier side.

Ingredients:

12 ounces uncooked fettuccine
2/3 cup whipping cream
6 tablespoons unsalted butter
1/2 teaspoon salt
Generous dash of white pepper (black will do find but white makes the sauce look nicer)
Generous dash of nutmeg (this makes the sauce in my opinion)
1 cup grated Parmesan cheese

Directions:

1) Cook your fettuccine following the directions on the box (be sure to cook it first and set aside so you can focus on the sauce, the sauce is very delicate and hard to get right the first time).

2) Heat up the cream and the butter in a large sauce pan (the KitchenAid recipe book calls it a large heavy skillet) over medium-low heat. Heat until the butter melts and it becomes bubbly, stirring frequently. Cook and stir for 2 minutes. Stir in salt, white pepper and nutmeg (it helps to have everything ready and pre-measured). Remove from heat. Gradually stir in cheese until well blended and smooth. Return to heat briefly to completely blend cheese, if necessary. (Do not let it become bubbly after adding the cheese or it will become lumpy and tough and your husband will insist that you didn’t add enough cheese)

3) Pour the sauce over pasta. Cook and stir over low heat 2 to 3 minutes or until sauce thickens and pasta is evenly coated.

 

I may not have gotten the sauce right but it sure did taste really good. I’m going to attempt to make it again, one of my mistakes was the I had asparagus in the oven, and the pasta was done at the same time the sauce was, so the sauce was neglected at a critical time. Ooops, live and learn!

Cooking Light First Foods Cook Book Review and Understanding Allergies

I already subscribe to Cooking Light’s magazine and love looking through all of the recipe ideas and how to make great food for my family. I don’t always have time to use them and sometimes they just get recycled, but I really enjoy them when I do take the time to create something. So, when Cooking Light contacted me and asked if I would do a review of their new Cook Book: Cooking Light First Foods, I thought, I’d love to see that.

So I recruited my little helper here and we’ve really enjoyed looking at the book together. I haven’t had time between traveling for my blog to actually cook anything and look at it with great detail but so far, she and I have been quite interested in the recipes. There is a section in it just for toddlers, it’s not just about making baby food. It starts there, with ideas on how to get children to eat and giving them a bit of everything. It also talks about grinding up lots of food. But Zoe and I are particularly interested in the toddler section. 

Cooking Light provided the following article for me to share about understanding Food Allergies. With my kids, they developed eczema with certain foods were introduced but they never had a severe reaction to food, but I know how the fear can be there.

Allergic reactions can occur anytime a person is introduced to something new. If the body perceives the new substance as a threat, the immune system produces antibodies to fight it off—even if the substance is completely harmless. Reactions tend to occur quickly after the food is eaten or when the person comes in contact with the food. The symptoms can range from mild to severe. It can be scary and unsettling to see your child experience a reaction. Your pediatrician or allergist is always your best resource if your child has any kind of reaction to food. Below are the recommendations on how to prevent possible food allergies.

Food allergy symptoms

  • Breathing problems and throat tightening.
  • Swelling of eyes, lips and/or tongue.
  • Sneezing and wheezing.
  • Rashes or hives.
  • Persistent diarrhea or abdominal pain.
  • Vomiting.

Most common foods that trigger an allergic reaction:

  • Cow’s milk and dairy products
  • Eggs
  • Fish and shellfish
  • Tree nuts (walnuts, pecans, etc.)
  • Citrus fruits and berries
  • Peanuts
  • Soy
  • Wheat

How to avoid food allergies

The American Academy of Pediatrics offers these tips to fight off allergies:

  • Wait until age 4 to 6 months to introduce solid foods.
  • Introduce one new food at a time; wait four days before introducing another. During this time, watch for any signs of allergic reactions. Consult your pediatrician if a reaction occurs.
  • The most common foods that trigger an allergic reaction are safe to introduce after age 4 to 6 months. However, consult your pediatrician or allergist before doing so, especially if baby has a parent or sibling with a food allergy.
