What is Coconut Oil?
According to Wikipedia it is a tropical oil with many applications. It comes from dried meat of the coconut. The oil makes up seven percent of the total export from the Philippines. The Philippines is the world’s largest exporter of the Coconut oil.
Virgin Coconut Oil
is derived from fresh coconuts rather than dried.
It is produced by:

- Quick-drying of fresh coconut meat, which is then used to press out the oil.
- Wet-milling (coconut milk). With this method, the oil is extracted from fresh coconut meat without drying first. “Coconut milk” is expressed first by pressing. The oil is then further separated from the water. Methods which can be used to separate the oil from the water include boiling, fermentation, refrigeration, enzymes and mechanical centrifuge.
- Wet-milling (Direct Micro Expelling). In this process, fresh coconut kernel is shredded and dried to about 10% to 12% moisture. The moist shredded coconut is then pressed to expel virgin coconut oil.[5]

My Story with Virgin Coconut Oil.
Tropical Traditions sent me a jar of virgin coconut oil. I have had time to use it in a recipe of my own, but they did also provide me with a book of recipes and information about Virgin Coconut Oil. I haven’t even begun to delve into the book but I will tell you about my cooking experience.
I like to make a recipe called Chicken Curry and Coos Coos. We usually use Coconut milk but I was out and I had this jar of Coconut Oil. My husband had already put the idea in my head so I proceeded to use the oil.
I used two tablespoons to cook the chicken and carrots. I think I went a little overboard with the oil but the smell was wonderful. I added flour and curry after the chicken was completely done. Then I cooked my coos coos and added some chicken broth. I don’t think I added enough chick broth because the final result was a little dry with the coos coos.
The taste however was wonderful. It added just enough sweetness to the curry so it wasn’t too hot.
I can’t make any claims on the benefits of how healthy it is. But even my husband had some awareness that there are some benefits to using coconut oil.
