Tasty Treaty By Summer: Morning Glory Muffins Recipe

It’s MomStart’s fault this is late this week, I admit, I didn’t have time to get this up for Summer. Here’s her fabulous recipe this week.

Sorry for not posting last week! I got so caught up in my “Super Mommy” mode! This is why I don’t have my own blog! HA!

So thank you to Louise for the pardon, and I hope you will provide me one too. SOOOO, this week I’m bringing you two recipes. This one is a great snack or breakfast item … which is why I named them “Morning Glory Muffins”. Not after the flower, but since I thought off all the sweet things I like to have for breakfast and just threw them into this batter.

If you need to “wake up and smell the coffee” (like I seem to need to do), then these will help! And, just for you, they’re simple to make! This is another of my all in one bowl recipes.

Morning Glory Muffins Recipe

Ingredients:

1 cup Mama’s Coconut Blend flour
½ cup quick oats
½ cup Love Crunch Apple Crumble
¼ cup wheat germ
¼ cup ground flaxseed
¼ cup butter
1/3 cup unsweetened apple sauce
¼ cup unsweetened coconut flakes (I used Bob’s Red Mill)
¼ cup agave
1 teaspoon ground cinnamon
¼ teaspoon cream of tartar
¼ cup shelled and salted sunflower seeds
1/3 cup white chocolate chips

Directions:

1. Preheat your oven to 350oF. Grease a mini muffin pan.

2. In your Kitchen Aid mixer with the paddle attachment mix all ingredients together until fully combined on speed 2.

3. Spoon into cups. Finish product will not rise, so plan accordingly! For minis cook 12 minutes but for regular muffins cook 22 minutes. An inserted toothpick should come out clean.

Tasty Treat: Skinny Jeans Blueberry Muffin Tops Recipe

This recipe will help you get into your skinny jeans while you eat muffin tops! Ironic! As always this is a one bowl recipe … why make more work?

If you’re about to start the recipe please know you’ll need a whoopie pie pan, a.k.a. muffin top pan. I didn’t have one, but a recipe I wanted to try called for one. I started looking at other recipes calling for this type of pan and decided I HAD to have one! I got mine on Zulily and it’s the Rachel Ray brand. If you like to experiment bake, do bake sales, or just need kitchen gadgets … get one!

This is also a gluten free recipe. You can make it Primal with using a coconut flour and not a blend (though you might need a stabilizer like xanthium gum); honestly I thought I was ordering coconut flour and didn’t realize it was actually a blend until I got it. But no worries, I’ll try and bake with anything. Just FYI.

How to make Skinny Jeans Blueberry Muffin Tops:

Skinny Jeans Blueberry Muffin Tops Recipe:
Ingredients:

1 cup almond flour
1 cup coconut blend flour
¼ cup apple sauce
3 eggs
2 tablespoons butter, melted
3 teaspoons ground cinnamon
1 ripe banana
½ teaspoon salt
1 teaspoon vanilla extract
¼ ground cloves
½ cup honey
2 cups whole, fresh blueberries

Directions:

1. Preheat oven to 350oF. Butter/grease a muffin top pan.

2. Thoroughly combine ingredients except blueberries. Fold in blueberries.

3. Bake in preheated oven for 15 minutes or until an inserted toothpick comes out clean.

Tasty Treat Summertime Savory Veggie Muffins Recipe

I can’t make my own bread! I know bread sounds intimidating … but really if you make muffins, you’re making bread; the trick is it’s usually not so sweet. Today’s treat is a savory for a hearty snack or an addition to really with any mealtime.

Summertime Savory Veggie Muffins Recipe

Ingredients

2 handfuls of spinach – probably about 3 packed cups un-wilted or ½ cup wilted
½ cup butter, melted
1 teaspoon baking powder
½ teaspoon baking soda
1/8 teaspoon salt
2 eggs
2 Tablespoons Parmesan cheese, finely grated
2 Tablespoons cottage cheese
1 teaspoon Basil, dried
½ teaspoon parsley, dried
¼ cup sundried tomatoes, chopped
1½ cups flour – I used 1 cup whole wheat and ½ cup all-purpose
1 cup 2% milk

Directions:

1. Preheat oven to 350oF. Line or grease a 12-cup muffin tin.

2. Place your spinach in a colander and pour a kettle of boiling water over top to wilt. Allow to sit so water drains out.

3. In your Kitchen Aid Stand Mixer bowl place butter, baking powder and soda, and salt. Turn to stir. Drop in eggs one at a time. Allow to combine on “stir” setting.

4. Pick up spinach in your fist and squeeze excess water out. Chop spinach. Stop mixer and add cheeses, spices, tomatoes, and spinach. Stir again.

5. Add half of flour to mixture. Combine. While stirring add in milk. Combine. Stop mixer and add in remaining flour. Combine.

6. Pour mixture equally into the 12 prepared muffin tin compartments. Place in preheated oven and bake for 20 minutes until tops are golden brown and an inserted toothpick comes out clean.

I made this pizza with my left over dough from the Banana Splizza. My husband loves apples, so this was just another one of those creations I think up. No real inspiration, just though another dessert is more fun than making an actual pizza … HA!

Caramel Apple Pizza Recipe

Ingredients:

1 Paula Deen’s Pizza Crust (which is ½ of the recipe)
1 large organic Honey Crisp apple
8 – .25 ounce caramel cubes
½ Tablespoon butter
½ Tablespoon heavy cream
½ teaspoon ground cinnamon
1/3 cup white chocolate chips
1/3 cup semi-sweet chocolate chips

Directions:

1. Follow the directions to make the pizza crust. Use a fork to poke holes in base to prevent bubbling. Bake.

2. While crust is baking cut the apple into quarters. Core. Thinly slice to about 1/8 inch slices. Place apples onto baked crust. Cover any exposed crust and broil under hi heat for 2-minutes.

3. In a small pot over medium-low heat combine butter, cream, and caramel. Drizzle over apples.

4. Sprinkle caramel apples with cinnamon. Top with chips.

5. Loosely cover pizza with aluminum and bake at 400oF for 5 minutes to melt the chocolate and heat the caramel. Cut and serve!

Robin Good and His Not So Merry Men VeggieTales Review

I love the stories of Robin Hood; sure, the legends retold today expand the actual story of his life. There should be one of those disclaimers on Robin Hood movies “inspired by actual events”! But maybe that’s a stretch considering people know little of Robin of Locksley’s true “rebel life”, which is where his Merry Men come into play. Robin “the good Samaritan” and great archer hide out in the forest, but historians believe there were copycats acting in Robin Hood’s name. Anyways, as you may know cowardly Prince John had taken over England and was taxing people while his brother King Richard the Lionhearted was on crusade to Jerusalem. Well, Veggie Tales takes the name of Robin Hood and changes Robin’s name and story; Robin Hood was known for “stealing from the rich to give to the poor” but Robin Good fundraises in this Veggie Tales feature cartoon …

Bonus Short – Lenny and the Lost Birthday – It is a good little story about being special. My boys were not excited to watch it as they wanted to watch Robin Good. But it was a cute little story about a boy whose family and friends forget his birthday on March 1. Or did they? This little asparagus just wasn’t informed that it was a Leap Year! The Lesson: Remember how much God loves us.

The Silly Song with Larry – Bubble Wrap – When it’s moving day, you must wrap and unwrap! So why not rap about bubble wrap … what kid (or adult) doesn’t love popping those little plastic bubbles?!?

Feature – Robin Good and His Not So Merry Men – Robin Good fundraises for the rich to give to the poor. Prince John has a food tax and is greedy about his pork and won’t share with the citizens of Bethling-HAM. The Merry Men become not so merry and changed their ways from fundraising to stealing from Prince John. SPOILER ALERT: Prince John blames Robin for the missing hams, but when Robin escapes his guards Price John locks up the Sheriff in the dungeon of despair. The Merry Men also get locked up for being caught with the hams. Once Robin saves the Sheriff with a reminder of God’s love and the Merry Men repent, a giant breaks into the kingdom. With no help from cowering Prince John, Robin and the Merry Men save everyone. The Sheriff is declared the guardian of the city until King Richard returns. The Lesson: There is no hurt that is too big for God.

Verse of the Day – Psalm 55:22 – Give your burdens to God, and He will take care of you.

My Mom Start Review Grade of Veggie Tales Robin Good on DVD: B+

Veggie Tales are worth purchasing. On Seattle TV, I know there used to be a channel that hosted their cartoons, but I can’t find it any more. I love the messages my children get from these Christian values cartoons. I like buying them and having them for at home viewing, but mostly for travel. When we travel our screen time rules go out the door (during the actual travel time in the car or plane), so having episodes is better for us than lots of long, non-educational movies. I enjoyed Robin Good and so did my sons (5YO and 2YO). I hope you like it too! This is a must add to your DVD library.

Should You Buy the Baby Bullet?

Review By Summer:

I have so many friends who love their Magic Bullet … and I mean LOVE. I haven’t ever owned one, but I have given some as gifts for weddings; common request. I knew a while back the Magic Bullet company made a Baby Bullet. The Baby Bullet is not only the “bullet” mixer, but comes with blender pitcher, silicon freezing tray, a refrigeration tray with six separate food containers featuring date on lids, plus rubber spatula, small and large food tips/tricks/recipe books. Pretty neat-o!

I’m so jealous of not having the Baby Bullet with my first child, but having said that, I’m either the best or worst person at Mom Start to review the Baby Bullet because I own a Vitamix. I’ve always wanted a bullet, but having now compared the two products I love my Vitamix though the Baby Bullet is nice and, the biggest part, a very fraction of the cost of a Vitamix. A Baby Bullet Complete Care System should cost you $59 whereas the Vitamix will set you back some Benjamins. Let me repeat though I’m in love with my Vitamix, adding a Baby Bullet to your registry is a good idea.

Besides the low price, it’s nice to have all the “extra” of the Baby Bullet over other blenders, elite or not. For making your own baby food with the Baby Bullet offers a complete package – two mixer heads (bullet and blender), freezer and refrigerator trays, and the food books. Though you can purchase the refrigerator Baby Bullet brand storage cups separately and Magic Bullet also offers a Baby Bullet steamer.

One down fall is cleaning the Baby Bullet which is a hand wash item. As a first time mom I had more time to do such things, but it progressively becomes harder as your child ages and requires more attentions, especially an only/first child. Having two children, for me, was a bit harder as I had to cater to a baby and also my demanding first child. But you can read the reviews on Amazon for yourself.

 

I also believe the Baby Bullet is better than “any old blender”. I’ve had blenders; the the Vitamix is the best I’ve EVER had, but the Baby Bullet does well for a blender and I believe out preforms cheap blenders I’ve owned in the past. Though a warnings from the reviews would be that the blend seems to only last about a year’s time (which should take you through one child’s solid food eating 6m-18m).

My advice would be to skip buying a new blender each year to couple of years or so (depending on wear and tear) and just get a Vitamix! The Baby Bullet is designed to make baby food in small portions, so add the Baby Bullet to your registry. Though, if you purchase the Baby Bullet for yourself from The Baby Bullet website you will get the Baby Bullet package plus the steamer AND a Magic Bullet System for about $100.

Tasty Treat Thursday: Peaches and Cream Cobble Griddle Cakes Recipe

After making the Apple Ring recipe I was thinking about what else I would do. Peaches seemed logical! Peaches and cream are a favored treat. Making rings out peaches isn’t possible without fresh peaches, so I had to alter my thinking. From jarred peaches I diced to bit size and added a creamy cheese … YUM! Eat these as a breakfast or brunch item if you wish, but my children just love to munch on these finger food favorites (minus any sticky sauces of course!).

Peaches and Cream Cobble Griddle Cakes Recipe

Ingredients:

1 egg
½ cup milk
1 cup flour
1 teaspoon almond extract
½ teaspoon salt
1 teaspoon all spice
2 teaspoons baking powder
½ teaspoon baking soda
½ cup plain or vanilla yogurt
1 Tablespoon unsalted butter, melted
4 ounce block of cream or Neufchatel cheese
1 ripe peach, peeled and pitted

Directions:

1. Chop cheese into mini bites about pea sized. Separate each piece; make sure pieces aren’t touching. Place in the freezer to chill.

2. Mix together all ingredients except cheese and peach. Stir until combine. (I usually add all the ingredients except ½ cup of flour and add it as the last ingredient. I mix as I got to get a smooth batter.)

3. Warm griddle to pancake temperature. On my stove top gas griddle I use the 6 heat setting.

4. Chop peaches into small bites no bigger than a dime. Add peaches and cheese to mixture. Fold in.

5. Pour batter onto griddle into desired size griddle cakes. Batter will spread a bit. When bubbles appear and pop on top, flip and fry the other side. Allow to cook until second side is also golden brown (about 45 seconds).

6. Serve warm with honey.

God Gave Us Love Children’s Book Review

With Valentine’s Day only a day away, you may be getting the question from your child(ren), what’s love? For me this question is easy to answer, God is love. For Christians it’s all in 1 John 4:7-21 (and throughout the Bible, but that pops into my mind first). However explaining this to my children is something else. We read the Bible and do a family devotional. My oldest son is in our AWANA program at church and memorizes verses, but I wonder how much he really understands at age 5. So, this Valentine’s Day when we cuddle up with all our holiday books we’ll be reading God Gave Us Love by Lisa Tawn Bergren, illustrated by Laura J. Bryant.

You may remember Lisa Tawn Bergren from our Mom Start review of God Gave Us the World released in January 2011 and God Gave Us You which was released in board book form July 2011. The original God Gave Us Love book was released in September 2009 but the board book was just released in December (2011). We don’t own the original book, but we were given the board book for this review. AND AGAIN, a HIT! We LOVE it!clip_image002

I appreciate the message in God Gave Us Love about the difference between like and love, and different kinds of love. Little Cub is upset with the otters and my not like them right now, but Little Cub can still love his friends the otters and same with his twin siblings who may annoy him. There is a love of friends; then there is love between family members including a special love between moms and dads. Then there is the extra special love from God.

The dialogue of the book is Little Cub and Grandpa Bear having a conversation about the different types of love:
“Because we want to love others as God loves us, but we don’t always feel like loving them. Choosing love is always right. God gave us love so we could see goodness in others, even when they make us grumpy.”
“I know, I know,” Little Cub said with a sign. “God gave us love”

This is a super cute way to share God’s love with someone you love. All About Nature’s Path Love Crunch

I enjoy food! I enjoy making it (as you may know from my Thursday Treats each week) and I enjoy eating it (which you also may know since I have reviewed some fitness products for Mom Start … I still have some pounds to go). I’m to the point in my life where I can choose I eat or chose to eat well; if I want a burger I want a fully loaded grass feed beef burger, for chocolate I don’t want a Hershey’s bar I’d prefer Fran’s or Theo’s, and I personally LOVE Nature’s Path granola over any other brand.

Nature’s Path Love Crunch premium granolas are top of the line – like Nordstrom’s, Café Vivace, Lexus. My family doesn’t buy cereal, but we do purchase Nature’s Path granolas. They are a brand I stand behind for their food (AND their eco issues – species conservation and going green – and their company’s philanthropic nature, but those are other Mom Start articles).

Love Crunch will come not in the traditional box, but in a bag, to forgo excess cardboard. Then the best thing happened just recently, Nature’s Path Organic asked me to try their new Love Crunch varieties – Carrot Cake, Apple Crumble, and Aloha Blend! Each of these are so delish! Even though I was looking forward to Carrot Cake, wanted the Apple Crumble for my husband, and thought I won’t like the Aloha Blend … I’m here to report they’re ALL awesome! Though my favorite is still “the original” Love Crunch Alhoa 036Dark Chocolate & Red Berries.
