You might have ready Summer’s Morning Glory Muffins recipe where she says she’s posting two recipes this week, well I just now had time to get up her second recipe. So here it is……

There are some of those days when you just need the mommy time … book club, MOPS, a shower, or just a glass of wine while making dinner. Hence my mixture of why and wine for the title. These have no wine in them, but they’re great little bit size add-on for any little party; even if the party is for one (though you might not want to make a full batch).
I “cheated” and bought a bag of pre-sliced (and I’m sure a day old) baguette medallions. I wasn’t going to make my own bread and so I also thought, “why buy one I have to slice when they’re done that for me?” Keep it simple!!!
Whyne Nots Recipe:
Ingredients:
1 bag pre-sliced baguette medallions
1 cup goat cheese
1 pear
1 cup arugula (a.k.a. rocket)
¼ cup walnut pieces
2 Tablespoons honey
Directions:
1. Set oven to “broil”. Allow to heat up while arranging medallions in a single layer on a large cookie sheet or in a jelly roll pan. When warm, turn on oven light, and place medallions inside. The medallions will turn a golden brown in under a minute, so watch them and remove when toasted. (For me this was about 30-45 seconds.)
2. Allow medallions to cool while you slice the pear into 1/8 inch slices.
3. Generously cover toasted medallions with goat cheese. Top with a leaf or two of arugula. Add a slice of pear. Drizzle with honey and top with walnuts.
Simple, but they look so elegant. I got so many compliments on these and they really took no time at all compared to other appetizers, snacks, and desserts I’ve created.
