For the New Year and a new you, this treat is on the very healthy side giving you something to munch on for breakfast, lunch, SNACK TIME, or dinner. Not only does it taste good and is satisfying, but it’s healthy. Eat up and enjoy … and share!
Rainbow Veggie Quinoa Recipe
Ingredients:
STAPLES:
1 cup quinoa, rinsed and read to cook
1 Tablespoon olive oil
VARIABLES:
RED – peppers (1/2 bell pepper), tomatoes (1 large, seeded), apple (1 small, cored)
ORANGE – peppers (1/2 bell pepper), carrots (1 large), orange zest (1 orange worth)
YELLOW – peppers (1/2 bell pepper), pineapple (1/4 cup), lemon zest (1 lemon’s worth)
GREEN – scallions (4 stalks), celery (1-2 ribs), baby spinach (handful), lime zest (2 limes worth)
BLUE – blueberries (handful)
PURPLE – eggplant (1/2 small), grapes (handful), raisins (1/4 cup), figs (1/2 cup, quartered)
Directions:
1. Prepare 1 cup dry quinoa according to the package. (I throw mine in my rice cooker and prepare like white rice.)
2. While the quinoa is cooking, prepare either sweet or savory add-ins from the variables list above (or think of your own and share them here, would love to hear from you). I made mine with tomatoes, carrots, peppers, lemon zest, and celery including the tops.
3. When quinoa is cooked moved into a serving boil and add olive oil. Coat. Add your mix and stir again to coat.
4. Serve, or refrigerate and serve. Either way is a healthy treat for the New Year!
This snack will help you obtain a healthier new year and is also cleanse friendly. The best thing about eating your Rainbow is if no one else wants to join you, this is a snack you’d be happy to take home and/or finish up as leftovers. No guilt!

I make a similar dish but use cucumbers and tomatoes instead. Works well with couscous, too.
