McCormick Spices For Health Recipe Challenge By Summer:
I try to be a healthy cook and get my family the most nutrients when cooking. I won’t say I’m a sneaky chef, but I add different vegetables to meal s to give us the opportunity to absorb as many naturally occurring vitamins as we can during meals and snacks. McCormick is challenging families to add “Spices for Health”. Here is my version of spaghetti for our family of four thanks to McCormick.
Spaghetti Recipe
Ingredients:
4 – 8oz. cans of no salt added tomato sauce
1 teaspoon McCormick oregano leaves
½ teaspoon McCormick crushed (cayenne) red pepper
½ cup fresh zucchini, chopped
½ cup fresh onion, chopped
½ cup fresh fennel bulb, chopped
½ cup fresh green bell pepper
1-2 pounds of ground beef or turkey, cooked (optional)
½ cup parmesan cheese, shredded (optional)
½ pound of whole wheat pasta
½ pound of spaghetti squash, cooked and removed from the skin

Directions:
1. Preheat oven to 350oF. While oven is heating cut spaghetti squash in half vertically. Clean out the squash by scooping out the seeds and string fibers, leaving the hard fresh and skin. Add ¼-inch standing water to a jelly roll pan and place each half of the squash flesh side down onto the water bath. Place in preheated oven and cook for 45 minute or until flesh is easily removed with a fork. Only test doneness (flesh it should sting like spaghetti) and allow the spaghetti squash to cool down for easier handling. Allow to cool until you can bear holding it in your hand and remove flesh.
2. In a large, wide-brim skillet add tomato sauce, McCormick spices and 2 cups of your favorite fresh vegetables – try mushrooms, zucchini, onion, fennel, tomatoes, olives or bell pepper. You can also add some of your favorite fully cooked ground meat. Heat sauce until desired temperature. Allow to simmer on low.
3. Prepare pasta according to package directions. Drain and combine pasta and squash. Plate and add desired amount of sauce. Top with parmesan cheese as desired.
Adding spices and fresh vegetables adds antioxidants and nutrients to foods you already include into your normal food rotation.

This sounds interesting. I have never had spaghetti squash before.
I use half and half … whole wheat pasta and squash. The texture is a bit different but it adds the extra vegetable to our diet. I’m not sneaky about it and the kids don’t always eat it. I also think the squash is better warm than cool, so eat up while it’s hot. Hope you try it 1stopmom! And if you do, come back and tell me that you think!
