Chocolate Chip Pancakes Recipe

When I got home from all my travels cooking dinner for the kids was the last thing I wanted to do. I was tired and just ready to jump on the couch to cuddle all night with the kids. So my adorable husband that he is treated me and the kids to pancakes, not just any pancakes but our special chocolate chip pancakes. YUM!

Chocolate Chip Pancakes Recipe:

 

Now we’re a family of convenience, so we LOVE to use the Krusteaz pancake mix and often follow the directions on the back of the bag. What we like to do is add about a 1/4 cup of chocolate chips to the mix and then make the pancakes on the griddle. But, I’ve seen many of you protest when I publish an ALL MIX recipe so here are some instructions on how to make an excellent chocolate chip pancake.

Ingredients:

1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1 cup chocolate milk
2 tablespoons vegetable oil
1/2 teaspoon vanilla extract
1/4 cup miniature semisweet chocolate chips

Directions:

Combine flour, sugar, baking powder and salt in a large bowl.

In another bowl, beat the egg, milk, oil, vanilla and chocolate chips. Add to dry ingredients and mix well.

Next, pour the batter by 1/4 cupfuls onto a lightly greased hot griddle (stir the batter before pouring each batch). Turn when bubbles form on top of pancakes.

Cook until the second side is brown.

The Cars 2 Car Tour Lighting McQueen Drives into Seattle

My kids were so jealous of me when they found out that I met Lightening McQueen, Mater and Finn McMissile a few months back when I attended the red carpet premier of Cars 2. Setting Real and Virtual Boundaries for Children Windows 7 & Windows Live

My husband and I were just talking about our kids and how they are getting close to that age where we need to let them have some time on the computer. Yes, kids are getting on the computer younger and younger, my three and four year old have computer class once a week in preschool. So where does that leave parents and how do we protect our children?

One you have to know what they are doing. Be sure to put the computer in a common area in the house. The kitchen, the study, somewhere where you all hang out together. For us, we haven’t picked a spot yet. We might have to put it in the living room where all the toys are currently stacked.

Two, limit what they can search on the internet. You have the ability to preview what they are looking at or checking on what they did look at after the face. Me, I’m more about being proactive and setting up limits first. Windows 7 and Windows Live already have some safety features already built into them.

SafeSearch is locked for Bing, Google, Yahoo! and other popular search engines to prevent your child from seeing adult content in search results.

Contact management, this provides parents control to monitor or restrict the contact list for their child in Windows Live Hotmail, Messenger and Spaces.

Taking advantage of Family Safety, parents can download the latest Windows Live Essentials and set up Family Safety in order to customize how they want to set various protections and safeguards to get their student safe while online.

Filtering images, which is helpful if your child visits websites that allow other users to upload images. This feature works best on Windows 7 machines with faster processing power.

Restricts ads, which means children’s Live IDs that are added through Family Safety and logged into the Windows Live network, will not see advertisements when using Windows Live services.

Sausage Pops Italian Meatballs on a Stick Recipe

I spent last week traveling and one of the places I visited was Johnsonville Kitchens where we went over a bunch of really fun holiday recipes. Since you guys said you wanted more recipes I’m more than happy to share them with you. Putting the meatballs on a stick like this just seemed so festive to me. Italian Sausage Meatballs on a stick

Sausage Pops – Italian Meatballs on a Stick Recipe:

Ingredients:

1 package Italian Sausage
I egg
1/3 cup crackers
1/4 cup grated parmesan cheese
1/4 cup milk

Directions:

Preheat the oven to 350 degrees F.
Decase the sausage
Combine the egg, crackers, cheese, milk, and sasuage in a bowl
Shape the mixture into meatballs (recommended 20 equal balls)
Arrange meatballs in a shallow baking pan
Bake for 20 minutes

Inside Real Steel with Sugar Ray Leonard Teaching Robots to Fight

In the movie Real Steel there is lots of action as we watch the robots fighting each other. The evolution of boxing changed from humans to boxing robots. Humans wanted the next level in boxing. They wanted to see destruction and well, people fighting to the death is just wrong. So in the near future we have robots that fight. Real Steel Robots

There is very little story on the evolution of robots in Real Steel, perhaps we might see a sequel in the future, only time will tell. When we come into the movie, Charlie Kenton (Hugh Jackman) is nearing the bottom of his career. He’s overdrawn on gambling and gets hustled big time as his last boxing robot is destroyed. Then he is reunited with his son, Max Kenton, Dakota Goyo, and uses his son to make a big chunk of money. He sells him. Yep, appalling. He uses that money to buy a very famous robot, Noisy Boy and loses him the first night. The robot was destroyed. So next we find him in the junk yard trying to find enough pieces to build his own robot, when his son almost falls to his death. He’s saved by a fully built shadow boxing robot named Atom. Max decides this robot now needs to be saved from the junk yard and taught to fight.

Sugar Ray Leonard

People teach the robots. But it’s a movie so who taught the actors. Sugar Ray Leonard was brought on as the boxing consultant for the movie, and what a talent he is. His career is full of so many wins he’s nicknamed The Champ. He’s so humble and genuine in person, I mean the guy got to golf with President Clinton (when he was president) and he had the amazing opportunity to meet. Nelson Mandela. WOW! He looks amazing too. This guy has been in quite a few fights and looks younger than my dad. He did an amazing job coaching the actors and puppeteers. The U.S. Premiere of DreamWorks Pictures' Action Drama "Real Steel"

Now when asked what he thought about the future of boxing, he said we very well could see larger than life size robots fighting each other in the near future. There’s already a huge change in boxing as it’s taken a back seat to UFC and martial arts. Would he enjoy watching robots fight in the ring, he said “if he owned some”. Now you may not know this but there is a boxing background in Hugh Jackman’s history. When Sugar Ray Leonard was asked about what it was like teaching Hugh, he said it was easy. Hugh Jackman is already very athletic, so all they focused on was the facial expressions. Hugh needed to look like a fighter and together they pulled it off.

Go See Real Steel it’s now playing in theaters, and Sugar Ray Leonard says it’s a multigenerational movie as his mother-in-law down to his children loved the movie.

Guest Post: Would More Programming Have a Positive Effect On The TV Zombie Effect?

The positive and negative effects of television are often debated in social circles and in families, and remain almost a controversial topic. Simply put, there are many benefits of television, ranging from the gathering of information to raw entertainment; but there are also negatives, such as wasting time, becoming attached to inappropriate material, and “zoning out.” Particularly with regard to kids who watch a lot of tv, it can be very difficult to strike a suitable balance between these basic positives and negatives. However, there are some expansive direct tv programming packages that can help a lot with the problem by simplifying kids’ television watching options.

The fact is, television is designed to be seductive. It is fun, constant, and available, and particularly for kids this combination can be all it takes. Furthermore, television shows from kid cartoons to heavy adult dramas are all specifically designed and written to “hook” viewers and make them want to watch more. Unfortunately, this often means that it’s easy for people to get caught up in programs that they are not even actually interested in. We’ve all been there – you’re sitting on the couch with nothing to do, and you start channel surfing until you find something vaguely interesting, and before you know it you’ve wasted an hour (or more) half-watching something that you don’t even care about. Again, kids are particularly susceptible to this sort of “zombie effect.”

Strangely enough, adding to your programming can actually help with this problem. Granted, more channels means more shows, and thus more potential things to become addicted to… however, if a child has a specific show to be excited about, he or she may be less likely to camp out in front of a television when bored. So, yes, the child will still watch television, and perhaps plenty of it, but he or she may be less likely to waste time idly channel surfing or zoning out in front of the screen.

Another benefit of adding a more complex programming package is that you may have more appropriate options for your children. Of course, most basic television packages include at least some sort of kids’ entertainment programming… however, you may also find that your children are watching things that you don’t approve of simply to fill time when their favorite kids’ shows aren’t on. With an advanced cable package, you will not only be able to potentially set parental controls (depending on your system and package), but your kids will also have more age-appropriate shows to choose from, which should cut back on their time surfing through more adult shows. Ultimately, as you can see, an expansive channel package might, oddly, be just what you need to enhance the positives of tv time and take away from the negatives.

Tasty Treat Thursday Adorable Carrot Cake Cookies Recipe

We have a local farm spitting out great carrots though I’ve heard carrots are best after the first frost then they get some real sweetness to them. Nevertheless, I got 2 bunches from the farm specifically for making a carrot cake. Then my 4YO had a request; he’d like cookies instead … challenge accepted. Here is my recipe for Carrot Cake Cookies.

Carrot Cake Cookies

 

Adorable Carrot Cake Cookies Recipe

Ingredients:

2 eggs
¾ cup milk
¾ cup applesauce, unsweetened
4 Tablespoons butter, unsalted and softened, divided
1 teaspoon vanilla extract
1 teaspoon almond extract
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 cup + 2 Tablespoons brown sugar, divided
1 cup flour
½ cup wheat germ
½ cup quick oats
¼ ground flaxseed
2 cups (shredded) carrots
1 cup raisins
1 cup Bob’s Red Mill coconut, shredded unsweetened
16 ounces cream cheese
1½ cups powdered sugar
1 Tablespoon milk (2% or higher)

Directions:a dozen Carrot Cake Cookies

1. Preheat oven to 350oF. Grease your cookie sheets.

2. With your Kitchen Aid Stand Mix using the whisk attachment mix together eggs, milk, applesauce, 3 Tablespoons butter and extracts. While in stir mode add in cinnamon, baking soda and 1 cup brown sugar.

3. Wash carrots and remove greens with ¼ inch top of carrot.

4. Stop mixer and add shredding attachment to your Kitchen Aid Stand Mixer. Drop in flour, wheat germ, oats, and flaxseed into bowl with wet ingredients. While stirring in bowl, shred carrots.

5. Stop mixer and add carrots, raisins, and coconut to mix and stir until they appear throughout the dough.

6. Drop cookies onto baking sheet. Cook for 12 minutes or until golden brown. Regrease your cookie sheet for each batch!

7. In the meantime, boil carrot tops for 8 minutes or until tender enough to pierce with a fork. Quickly drain fluid and run cold water over tops. Place tops in a skillet with 1 teaspoon butter and 2 Tablespoons brown sugar.

8. While everything is cooling, whip together cream cheese, powdered sugar, and milk.

9. When cookies and carrots are cool, frost cookies and decorate with carrot tops.

Yields 4 Dozen
