Puff Pastry Sausage Turnovers Recipe

I’ve worked with Johnsonville Sausage a few times and on one of my trips there they gave me the cookbook Johnsonville Big Taste of Sausage Cookbook. This cookbook has more than 125 recipes for on and off the grill from Johnsonville Sausage. It’s been a few months and I finally tried one of the recipes and it was a huge success.

Decase the sausage and then brown it.

Roll out the puff pastry

Roll it out into 12 1/2 inch squares

Mix sausage, eggs, ricotta, and cheese in a bowl

Ingredients
  • 16 ounce package Johnsonville Mild Cooked Italian Sausage
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup ricotta cheese
  • 1 large egg
  • 1 17.25 ounce package frozen puff pastry thawed
Directions
  1. If you purchased raw sausage then be sure to brown it
  2. Preheat the oven to 400 degrees
  3. Combine the sausage, cheddar cheese, ricotta cheese, and egg in a large bowl
  4. On parchment paper, roll out each sheet of the puff pastry into about 12 1/2 inch square
  5. Cut each into 25 equal shapes ( think it would be better if you made each one a bit bigger so maybe do 15 equal squares)
  6. Place 1 well rounded spoonfull of filling on each square
  7. Fold the squares to form triangles and crimp the edges with a fork
  8. Place the turnovers on a lightly greased baking sheet
  9. Bake for 15 minutes or until golden brown

Lionsgate From Book To Movie, The Hunger Games & One For The Money

I’ve noticed recently that Lionsgate is into turning books into movies. They transformed The Hunger Games from book to movie with the first one coming out March 23, 2012.  The Hunger Games is a very popular series by Suzanne Collins and is remarkably amazing. I read the first book in one week and book two and three took me a weekend. I can’t wait until this hits theaters. Check out this Hunger Games movie trailer.

 

And they’re turning Janet Evonovich’s books into a movie, One For The Money. I love these books, they’re the kind of books that once you start reading them you just can’t put them down. I’ve read at least seven of them, and then stopped for some reason. I’m going to have to pick them back up and start over in anticipation of the movie. I remember six or seven years ago when I started reading them, there was talk about a possible movie even then. It’s nice to see it finally come to fruition. It’s hard to find too many ACTUAL movie details on-line, I just googled it, but I do have a movie synopsis for you here.

I’ve also read rumors on-line about Lionsgate bringing What To Expect When Your Expecting to life in the theaters possibly in 2012. It’s being kept tightly under wraps right now.

The Bathroom Reveal – A Better Homes and Gardens Makeover

I had so much fun decorating the bathroom. Choosing all Better Homes and Gardens products was harder than I thought it would be because the products are priced so low. I had a terrible time picking out enough to spend the amount I was allotted because every time I added something I still had more to spend.

Well, I finally picked out everything and took the pictures this morning. Remember the Before?

If you use your bathroom to unwind and relax, start incorporating more spa/zen like colors and textures. If it’s purely for getting ready – then add more functional pieces; a shelf over your toilet for more space, update the fixtures and linens, maybe add a little artwork to a wall.

So I added some artwork where the toilet is, above my sink, and two of the the Better Homes and Gardens three lengthwise mirrors above the towel rack. I also added the Better Homes and Gardens red curtain above my bathtub and a lengthwise bath mat for when I get out of the tub.

I love the wall color you have. You need something in your shower to hold all your shampoo bottles and stuff

So I added the Better Homes and Gardens shower organizer. I love how it has four adjustable shelves. We kept the color and I added a few Better Homes and Gardens bath towels, and on the bath tub I also changed out my candles and added the Better Homes and Gardens Black candle holders.

 

I love the color red so I kept that color and just got more of it. I organized the toilet room with a black Better Homes and Gardens shelf that my husband put together with the kids. It’s really nice to have a newly decorated bathroom and to actually have somewhere to put everything. New houses just don’t come with very much storage space. I might one day have to build my own shelves above the black shelf because there is quite a bit of unused space there.

Starlight Peanut Butter Cake with Peanut Butter Icing Recipe

Who says you can’t get too much peanut butter in one dose? I do! I LOVE Peanut Butter so much that I would eat it out of the jar if my kid weren’t always watching me. This is the cake recipe that broke my camera flash. But guess what, I’ve already got a new flash and I’m back to taking awesome photos.

For the Peanut Butter Cake Recipe:

Find two cute kids to help you gather the ingredients.

Ingredients:

2 1/4 cups all purpose flour
1 1/2 cups sugar
1/2 cup peanut butter
1 1/4 cups milk
3 1/2 teaspoons baking powder
1 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
3 large eggs

Directions:

Heat oven to 350 degrees F

Grease the bottom of a 13 x 9 baking pan

In a large bowl beat all the ingredients

Pour into pan/pans

Bake 35 to 4 minutes or until toothpick comes out clean

Cool on wire rack for about an hour

The Peanut Butter Icing Recipe

The Icing was the best part in my opinion. My husband found it in the cookbook Southern Plate, which is also a blog that strongly believes in sharing recipes. I can’t remember which campaign I received her cookbook on but my husband can’t wait for me to try many of the recipes in it. I never picture him to like southern food, but I was quite happy to find that out.

Ingredients:

1 1/2 cups sugar
7 tablespoons milk
2 tablespoons shortening
2 tablespoons margarine
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup creamy peanut butter

Directions:

Combine the milk shortening, margarine and the salt in a medium sauce pan.

Bring to a rolling boil, stirring constantly to prevent scorching.

Once it reaches a rolling boil stop stirring and let it boil for 1 to 2 minutes or into it reaches the soft ball stage as you can see on our candy thermometer.

Remove from the heat and quickly stir in the vanilla and peanut butter. Beat until smooth and then very quickly Ice the cake, works best on a flat cake. It’s hard to spread.

It tastes just like the no bake cookies except it’s missing the chocolate. It’s delicious.

The Four Seasons Atlanta a 5 Diamond Hotel…A Mother’s First Night Away From Home

As a mother that has the opportunity to travel and have some me time, I can greatly appreciate this story by my contributor Ashley, who recently had the opportunity to be away from her child for a few days for the very first time.

The Story of This Mommy’s First Night Away From Home

Thanks to MomStart, I recently took my first trip away from home… ALONE. It was the first time in 14 months (I guess almost 24 months if you really want to get technical about it) that I had been away from my little guy for more 8 hours. Last week, MomStart sent me on what will have to be called (for now) a “secret mission.” I wish I could tell you all about it right now… but I can’t. (Big boo to that.) Instead, I’ll let y’all get to know the personal me a little more… and share my first night away from my baby boy… EVER! I have to say, it could not have been better.

By the time my flight landed in Atlanta, actually made it to the gate, and I hopped (well maybe more like slumped) into my cab, it was already 10:30. However, after hearing the slightest bit of envy in my husband’s voice earlier in the week when I told him where I was staying, I had no problem letting the cabbie know my destination, “The Four Seasons Mid-town, please.” I already had visions of a giant bed, fresh sheets, and (if I was lucky) a giant tub.

clip_image002As I pulled up to The Four Seasons Hotel in Atlanta, I knew I was in for a treat. Come to find out this is the only five star, five diamond hotel in the state! I was of course greeted by a bellman who ever so patiently waited for the super slow credit card machine in the cab. He had already unloaded my bags (which weren’t much since it was just me!), and opened my car door. As he walked me into the hotel and escorted me to the front desk, I tried to take in the amazing scene of the lobby as he welcomed me with small talk and treated me like someone he’d known for years. One thing was for sure as I walked through the marble and brass, grandiose lobby with a staircase worthy of Scarlett O’Hara. I was SO happy that I had chosen to wear brown pants and a “nice” (as in Old Navy clearance… but it had pretty sparkly things on it) shirt. I felt slightly underdressed as it was. Had I been in my usual travel wear of sweats and a t-shirt… EEK! I’m sure they still would have been so kind to me, but I would not have felt so comfortable.

Anyway, after an interaction with the desk clerk (who is actually probably called a hospitality specialist or something like that) that I can describe as nothing besides the BEST customer service I have EVER had… I was off to my room. OH… don’t let me forget that I was escorted around the desk by the “hospitality specialist” and then taken to the man who escorted me to the elevators. Any hesitations that I had before leaving the house were quickly fading away. I felt like a queen! Well… no one was bowing to me or anything… so maybe just like someone really important! =)

I was starving, but first things first. I had to check out my room. Call me a dork, but 4 things blew my mind in my room.

1 – MY NAME WAS ON THE TV! Yes. It does not take much to impress me. My name on the TV though? That was just plain cool.

2 – There was a peach that I was to leave on my bed if I didn’t need the sheets washed each day. Not as cool as the TV, but just the whole tie in to Georgia with the peach was cute. It made me smile.

3 – There was a small bathmat type thing beside the bed. It cracked me up! I’m guessing it was so my feet never had to touch the carpet…? I’m not that germaphobic though. It just made me think of being somewhere fancy enough to through a bathmat beside the bed! Sorry no picture… but here’s the bed! =)

4 – The bathroom… OOOOH the bathroom. There was a glass shower AND a separate, nicely sized tub. I immediately started picturing a quiet, uninterrupted, unrushed bubble bath. (:Sigh:…sorry… just getting caught up in the memory… =))

Anyway, after checking out my room, I headed to “The Park 75 Lounge” at The Four Seasons where I was very much out of place. There were a few tables with 3-4 people at each; all business men. I was definitely out of place. I found myself a nice corner spot (perfect for people watching) and decided on a couple snacks for my late night dinner. After ordering deviled eggs and “jack and cheese” (mac and cheese made with pepper jack cheese), the waitress brought me a snack plate. Had I known that I was going to get such delicious snacks, I would not have ordered ANYTHING. The snack mix was delicious… but the candied pecans (and yes I do say “Pee-cans”) were AMAZING. I pretty much inhaled all of my food… and it was delicious.

I took some time on my way back to my room, enjoyed the sights, and then realized how late it was. It was after midnight in Atlanta! I had to be up the next morning so I knew there would be no time for enjoying that tub that night. (Not to worry… I eventually took full advantage of it…)

clip_image018As I crawled into my giant bed (my husband and I share a queen, so being alone in a king was AMAZING!) I got a little homesick. No, no, no… not for our lumpy, queen bed in the room where in summer the windows stay open and all of the noise from outside comes in… and not homesick for “the list” that I make in my head at night of what needs to be done the next day… but homesick for that last late-night check I always do on my baby boy. I always sneak into his room, turn down the music playing, make sure the temperature is just right, and pull his blanket(s) up over him. Sometimes, if I’m feeling brave, I even give him a little kiss on the forehead. I really did miss seeing his little sleeping face before I crawled into bed myself. I even missed the mindless TV watching that I do with my husband before bed. I even got a sweet goodnight picture message from my boys. Don’t get me wrong, I was enjoying myself IMMENSELY! How could I not love the opportunity to stay at The Four Seasons Atlanta? It was just enough homesick to know how much I love “my job”, my family, and how lucky I was to have everything that I do… especially this amazing trip to Atlanta. Yes, I was there to work for MomStart… but this was also an extremely relaxing vacation from my full time job as a SAHM. I know most moms don’t have this as their first trip away from home… I am so lucky and I am incredibly thankful for such an opportunity!

Did You Take Your Husband’s Last Name

Did you take your husband’s last name? Over at Jen and Barb, Mom Life, Jen and Barb are discussing this hot topic. After watching the video I felt insulted that Barb said changing your last name is declaring that I need a man in my life. You have to watch the video and then weight in with your response. How do you feel about your last name and did it change who you are?

Here is part of my response……

Taking your husband’s last name is a personal choice. You have to do what’s right for you. I grew up in a very traditional family where the father is the leader of the family and has the final say. At the same time, I was raised to be very independent and to think for myself and to make sure my opinion was heard. My stepmother raised us girls to have the desire to take care of ourselves. I went off to college, lived on my own and took care of every expense myself. I can be on my own, I know this about myself.

I took my husband’s last name and I’m not wimpy and I didn’t lose my identity by changing it. I haven’t lost my voice either. My husband and I make decisions together. My name doesn’t identify me it never did. I define myself. I actually never even considered not taking my husband’s name. As part of taking a husband I took his name, I believe that a man and woman become one unit, we both bring different things to the union but we are both still ourselves. We grow and change over the years and we learn how to understand our differences. A name doesn’t change any of that. I don’t even really see what the big deal is in changing your last name.

Cheesy Po-Tot-Chos Recipe

You won´t have to ask twice to get everyone in front of this pile of potatoey tots, topped with cheese, salsa and fresh veggies like tomatoes and avocado. Cheesy Po-Tot-Chos Recipe

 

Ingredients:

1 bag (32 oz) frozen potato nuggets
1 can (15 oz) Progresso® black beans, drained, rinsed
1 can (4.5 oz) Old El Paso® chopped green chiles, drained
1/2 cup Old El Paso® Thick ‘n Chunky salsa
1 1/2 cups shredded Cheddar or Colby-Monterey Jack cheese (6 oz)
1 medium tomato, chopped
1 medium avocado, pitted, peeled and cut into chunks
1/2 cup sour cream

Directions:

Heat the Oven to 450 degrees.

Arrange the frozen potato nuggets in a single layer on a cookie sheet. Cook for 24 – 26 minutes

Line another cookie sheet with parchment paper or foil

In a medium bowl, mix beans, chilies and salsa. Spread half of the potato nuggets on the lined cookie sheet, spoon half of the mixture over the potatoes, cover with half of the cheese. Repeat the step using the remaining ingredients

Top with Tomato and avocado and serve with sour cream.

Add Additional toppings, as desired (thinly sliced green onion, chopped fresh cilantro, seeded and chopped fresh jalapeño pepper, sliced ripe olives, guacamole, additional salsa)

Food Banks:

Our local food bank has different kinds of drives all year round. In the Summer time they feed the kids who will be missing a meal because they aren’t in school. As part of Box Out Hunger, we collect as many cereal boxes as we can as a community and give them to to food bank and they give them to families that need to fee their children. At the end of September they do a back to school drive. Yes our food bank collects backpacks and many other school supplies to give to teachers to fill their closets and to students in need of school supplies. They also do birthday bags, this is where you can put together a gift, party favors, cake mix, decorations and everything you need to put together a birthday party for all ages. Another drive is the holiday toy drive. There are so many places the food bank included that collects toys for children in need during the holidays.

Parks:

Clean up a park near you. School parks and community parks are in need. As budget cuts continue for schools, playgrounds and sports programs are the first to disappear leaving students with limited space to let their imaginations run wild and put simply, to play! To help kids have a safe and active space, Sprite created Sprite Spark Parks Project; a multi-year commitment to bringing a ‘spark’ to active spaces within communities across the country. Starbucks usually has a clean the park day every year too.

Charity Events:

Charity events are held all year long supporting so many different causes. Pick your cause and help support your charity. We supported the Eastside Domestic Violence Shelter’s charity event by donating a ton of wonderful products for them to auction off. We also gave to Treehouse, Special Delivery, Movember, and the Seattle Mom Prom just to name a few. Find out what’s going on in your community and start making a difference in someone’s life.

You Can Still Drink Chocolate Milk

I remember going to school and drinking chocolate milk every day. I never ever thought about how much sugar was in it. All I considered was that between plain milk and chocolate milk my choice would chocolate milk. I have always had quite the sweet tooth. And most children enjoy a good dose of sugar right? Well as children are returning to school and parents search for better-for-you, nutrient-rich beverage options for their kids, I know I am.

TruMoo-Group-mdDean Foods is known for its 35 regional dairy brands across the country. They launched TruMoo, a potential solution to the chocolate milk debate which meets the proposed USDA school nutrition guidelines. With the introduction of TruMoo, more than 26 million pounds of sugars – or 40 billion calories – have been removed from milk served in schools and retail across the country. TruMoo is made with nutrient-rich white milk and contains no high fructose corn syrup or artificial growth hormones. I tried it and I liked it. Honestly it’s not as sweet as chocolate milk is but it still satisfied my chocolate need. It’s not as sweet because it doesn’t have high fructose corn syrup in it. It’s naturally sweetened. I wish they sent me more than they did because I found myself drinking all of it and it was gone before I even had a chance to share it with the kids. I guess the solution is to go out and by some for myself.
