Day Out with Thomas: Leader of the Track Tour 2011

Just wanted to let everyone know that locally the tickets are on sale and they sell out fast. The Northwest Railway Museum is host to the Day Out With Thomas: Leader of the Track Tour 2011 in Washington. We’ve never been but we have taken a ride on the Toddler Train and the kids love it. So we’re looking forward to having a Day Out with Thomas this year.

Pulling out of the station for its 16th consecutive ride on the rails, the Day Out With Thomas: Leader of the Track Tour 2011 will visit more than 45 cities in the United States and Canada. Day Out With Thomas is the only place for families to take a ride with a 15-ton replica of everybody’s favorite No. 1 engine, Thomas the Tank Engine, and enjoy Thomas-themed activities at the Imagination Station, including stamps, temporary tattoos and hands-on arts and crafts.  Each year the tour grows, traveling to new destinations, adding new activities and welcoming new visitors.

“Make – Ahead” Recipe – Pork Apple Pie

 

This recipe is taken from the book Make-Ahead Meals: 100+ Recipes for Home-Cooked Meals You Can Serve at a Moment’s Notice by Victoria Shearer.

Make-Ahead Pork Apple Pie Recipe:

Ingredients:

2 T olive oil, divided
2 lbs pork tenderloin, cut into ¾ inch pieces
1 large onion, sliced, then quartered
6 oz Portobello mushrooms (2), black pith removed, halved, and sliced ¼ inch thick
3 Granny Smith apples, peeled, cored, and thinly sliced
1 T fresh lemon juice
1 ½ t dried sage
1 ½ t salt
¼ t crushed red pepper flakes
1 T Dijon mustard
1 ¼ c apple juice
2 T butter
¼ c flour
Dash ground cinnamon
1 T sugar
2 T snipped fresh flat-leaf parsley
1 rolled Pillsbury Pie Crust for 9-inch pie
1 egg beaten with 1 t water

Directions:

Place 2 T olive oil in a large nonstick skillet over medium heat. Add pork and sauté’, stirring constantly, until meat is browned on all sides. Transfer pork to large bowl with slotted spoon and set aside.

Wipe out skillet with paper towel. Add 1 T olive oil. Add onions and mushrooms to hot skillet and sauté until vegetables are soft and released liquid has evaporated, about 2 minutes. Add apples and sauté 1 minute more. Add vegetables and apples to pork and mix well.

Microwave apple juice on high for 1 minute. Melt butter in a small saucepan over medium heat. Whisk in flour, forming a roux. Slowly whisk in warm apple juice and cinnamon until mixture is smooth and thickened slightly. Stir apple juice sauce into pork mixture until ingredients are well coated.

Coat a 10 inch deep pie dish with cooking spray. Transfer pork mixture to pie plate. Sprinkle with sugar, then parsley. Cover with plastic wrap, then with aluminum foil and refrigerate for up to 24 hours or freeze until needed.

To serve: Bring pie to room temperature. Preheat oven to 350* F. Allow pie crust to reach room temperature, then unroll it on a large sheet of parchment paper. Roll crust with a rolling pin until it is large enough to cover the plate with a 1 inch overhang. Lift edges of parchment paper and invert crust onto pie. Crimp edges of crust and cut a 1 inch slit in the center of the crust. Brush crust and crimped edges with egg wash. Bake for 45 minutes or until crust is golden brown and pie is bubbling.

I should say that I made a few adjustments to this recipe. I didn’t have a 10 inch deep pie pan, so I just used an 8×8 glass dish. I also didn’t need to roll the crust at all to have it fit over the mixture. I also never found where I was supposed to use the lemon juice, so I didn’t. Anyway, it turned out great! How To Buy A Mattress Sleep Number Bed Twitter Party

My husband and I purchased a Sleep Number bed in February of this year. Sometimes we feel guilty about spending so much on a bed, but then when we wake up each morning refreshed and without back pain we know we made the right choice. Before deciding on the Sleep Number bed we tried quite a few different mattresses. We tried a foam mattress and I hated it right away but since my husband said he we ok, I was willing to endure. After a few months he felt as I did, we were sleeping in a whole and it was hard to get out of. We tried two other mattresses and both were equally bad in different ways. So my advice is, if you’re looking to get a new mattress, check out the return policy so you can try it out for a while and return it.

Gnomeo and Juliet on DVD & Blu-ray May 24th.

The other day, I let Zoe open up all the mail and to her surprise was Gnomeo and Juliet on DVD & Blu-ray. She was screaming with excitement. Mommy, Mommy, look, we got Gnomeo and Juliet.. (Officially it comes out May 24th.) She was SUPER EXCITED!

clip_image001We saw Gnomeo and Juliet in the theater and it’s something to remember. It was the first 3-D movie either of my children went to go see. It was very musical and we have the soundtrack to the movie too, so she loves the music. We’ve used the Gnomeo and Juliet soundtrack to dance all night together as a family. It’s great exercise music.

Oh and who can’t help but love Nannette?

Mickey Mouse Clubhouse: Mickey’s Great Outdoors Mickey Mote

clip_image001Are your kids ready for an outdoor adventure. Mine have been stuck indoors for MONTHS. You know in the Pacific Northwest it rains September through June, so since we have about a month left of rain we’re just going to have to live vicariously though Mickey Mouse. On May 24th Mickey Mouse Clubhouse is going to explore the Great Outdoors in, Mickey Mouse clubhouse: Mickey’s Great Outdoors. Mickey and his friends Donald, Daisy, Goofy and you can’t ever forget Pluto right are going camping fishing and exploring.

I suspect that after watching this it will be easier to get the kids to go on an “outdoor adventure”. This great title is another Mickey Mote title. The Mickey Mote is great for the kids to use and interact with the story. If you use the Mickey Mote setting it stops regular play and asks the kids a question and they need to respond the correct answer in order to continue the storyline.

Barnes & Noble NookColor Update & Giveaway

NookColor has 1.2 reasons to be celebrating. NOOKColor has an awesome update making the NookColor the most bang for your buck when it comes to an e-reader, and not just any e-reader it’s a color e-reader. When you upgrade to  Nook 1.2 you will be amazed at all of the new features as all of the sudden you have a tablet. I was amazed when I found out about all of the new features. The NookColor has more tablet capabilities like full integration with e-mail. I have a very bad habit of checking my e-mail before I start reading my book.

So I’m not entirely sure that full-featured email is such a good thing. But who am I kidding right, not everyone has my email addiction.

I DO LOVE playing games: like Angry Birds, Uno, Solitaire, and Bubble popper.

But more than games this new update transforms your ereader into a tablet. Using it as an educational device for my kids has been it’s most appealing feature in our house. I mean the kids claimed it as their own from day one. So I’m really excited that the Read and Play feature has grown, with authors like Sandra Boynton and Dr. Seuss. Then there are quite a few educational apps for older kids and adults too, from learning a new language to improving your math skills.

Another really cool feature is the enhancements in web browsing; shopping, global searches and animated content. The Nook Color supports Adobe Flash Player allowing you to watch in-page videos. It’s really cool!

Black & Decker Ultimate Sandwich Chicken Fajita Pita

I decided this year that it is the year of entering sandwich contests, this being my second one. The Black & Decker Ultimate Sandwich Recipe Contest is like the last contest I entered between my blogging piers. This time, I had to come up with a hot sandwich instead of a cold one. I LOVE Hot sandwiches, because I love my bread to be nice and toasted. However, as I was exploring sandwich ideas, I decided to break away from the bread all together.

This is the Chicken Fajita Pita made in the Black & Decker convection countertop toaster oven. I love things that are easy so instead of making each part from scratch, I used what I had on hand.

Ingredients:

2 – 3 Red Bell Pepper (cut into strips)
1 lb. Pre-cooked Frozen Fajita Chicken Strips
1 can Enchilada Sauce
3/4 Cup Cheese (separated)
Sour Cream
Fresh Pita Bread

Directions:

Use the Black & Decker convection countertop toaster oven to heat up the chicken according to the directions on the back of the bag. (You can always cook your own chicken too. Then you would have to use the skillet, cut the chicken into strips, season with salt and garlic and brown the meat making sure it is done all the way through. But like I said, quick and easy for me)

Set the temperature on the Black & Decker convection countertop toaster oven to 400 degrees. Gently sprinkle the bell peppers with olive oil place on the cooking sheet and cook the peppers for 8 – 12 minutes depending on how crunchy you like your peppers. I like mine softer.

Heat up the Pita Bread at 350 degrees for about 5 minutes. It comes out really soft and warm.

Pour the Enchilada sauce into a sauce pan on the stove. Heat up until boiling then add 1/2 cup of cheese. Stir until cheese has melted until the sauce then simmer on low for 2 minutes stirring occasionally.

Assemble your sandwich. Add the chicken, bell peppers, sprinkle with remaining cheese, pour cheesy enchilada sauce over both and close your pita bread into a sandwich. Garnish with sour cream.

Black and Decker will be selecting 4 –5 finalists out of the 20 or so bloggers that come up with an original recipe. They will recreate the sandwiches, taste test them, and finally select the grand prize winner. The grand prize winner will receive a $1,000 cash prize and have their recipe professionally photographed in a nationally distributed back-to-school themed feature this summer. I’m so glad it’s not a voting contest, I hate begging you guys for votes.
