Tasty Treat Thursday Taste of The Islands Trifle Recipe

For this recipe I made my own pound cake because I love having a hand in what I make, if you prefer, use 1 – 10.75oz Sara Lee pound cake instead of making your own. If you want to make your own, here is my recipe:

clip_image002Pound Cake Recipe

INGREDIENTS
1 cup salted butter, softened or melted
1½ cups sugar
2 eggs
1 teaspoon vanilla extract
½ teaspoon baking powder
1½ cups all-purpose flour
1 cup milk

DIRECTIONS

1. Preheat oven to 350oF. Grease and butter a loaf pan.

2. Prepare your Kitchen Aid Stand Mixer with the Flat Beater attachment. In mixer bowl cream together butter and sugar.

3. When completely creamed keep mixer running, drop in eggs one at a time. Then add in baking powder and vanilla.

4. Mix in flour and milk alternatively in ½ cup increments; starting and ending with flour.

5. Pour in prepared loaf pan and set into preheated oven. Cook for 60-90 minutes. If top is golden brown but inserted toothpick is emerging wet then cover with aluminum foil and continue to bake. Toothpick should come out clean and top should be golden brown. Allow cake to cool.

I also made my own caramel sauce because it’s easy:

Caramel Sauce Recipe

INGREDIENTS
1 cup unsalted butter
2 cups light brown sugar
¼ cup milk
1 teaspoon vanilla extract

DIRECTIONS

1. In a saucepan combine butter, brown sugar, and milk. Cook and stir over medium heat for 3 to 5 minutes. Remove from heat and stir in vanilla.

So for my husband’s work anniversary it’s custom for the employees to bring a pound of eatables (typically M&M, Skittles, Hot Tamales, gum balls) to work to share and celebrate. In the past of course I haven’t allowed my husband to bring these things. I rather just make something myself … so I have!

I can’t remember all the anniversaries, but what I can remember:
3 – 3 dozen cupcakes
4 – 4 dozen chocolate chip cookies
5 – 5 lands on a cake made into a Candy Land game board
6 – 6 layer chocolate cake
7 – 7 layer dip

8 – That is this year. I made an eight element trifle – pound cake, caramel, coconut whipped cream, bananas, pineapple, toasted coconut, macadamia nuts, and banana whipped cream.

Taste-of-the-Islands Trifle

1 – 8oz can Dole pineapple tidbits in juice
1 – 3.4oz package instant coconut cream pudding
1 cup heavy whipping cream
1/3 cup sour cream
¼ cup powdered sugar
2 teaspoons coconut extract, divided
1 cup caramel
3 bananas
1 cup shredded sweetened coconut
1/3 cup macadamia nuts, finely chopped

1. Preheat oven to 300oF.

2. Open Dole canned pineapple and drain juices into a bowl. Slice banana into 1/4” thick medallions and place in juice. Set both pineapple and banana aside.

3. Place coconut onto a jelly roll pan and cook in preheated oven for 20 minutes. Every 5 minutes mix around to evenly toast and not burn coconut. Set coconut aside.

4. Prepare your Kitchen Aid Stand Mixer with whisk attachment. Into mixer bowl place pudding mix, creams, sugar, and coconut extract. Whip on medium-high speed until stiff peaks form. Set aside.

5. Cut cake into 1-inch cubes.

6. Mix together pineapple, coconut, bananas and macadamia nuts.

7. Layer trifle in trifle dish or individual glass dishes – cake, caramel, cream, fruit mix, cream, cake. Garnish as desired with any reserved cream and fruits and nuts.

8. Keep chilled until serving.

Just typing in my zip code pulled up quite a few different options for Summer Camps. I found 29 just within 5 miles of my house and with kids just 3 and 4 I wouldn’t want to send them too far away. When I used the filter for age 3 then the number went down to 9, but remember that’s still 9 within 5 miles of my house. So finding a summer camp in your area is at your fingertips now with such an easy site to use to find them. THQ Fantastic Pets XBOX 360 Kinect Easter Basket Giveaway

Fantastic Pets came out for Xbox 360 for Kinect April 12th and we love it. In Fantastic Pets kids get to create, collect and interact with unlimited varieties of pets. And if you’ve seen the game you have to know that Zoe’s favorite animal is a purple unicorn and Miles loves his orange dragon type creature. Both of the kids picked animals that can fly and were actually able to play the game from set up, to animal training, tutorial to actual play mode.

fantastic pets logoFantastic Pets Game features include Creation, or changing your animals features. Zoe was able to make some changes to her purple unicorn and she thought it was the greatest for her purple unicorn to get a bright sparkly blue horn. I think she was proud that she did it all by herself. She’s FOUR! Customization includes changing the skin, colors patterns, wings, horns tails and creation of your own species. We have yet to get that far in the game.

purple unicornOther Fantastic Pets features hands on interaction with the pets, Zoe had to give her unicorn a bath, brush him and feed him. She quickly learned that horse type creatures do NOT like dog biscuits. There is also an occasional multiplayer option where the kids can work together. A feature we have yet to try is the voice command feature. So far all interaction has been responses to hand commands from the kids, and extreme jumping up and down to pop bubbles. That’s one of their favorite games because the more they move the more bubbles appear for them to pop with their fantastic pet.

fun mini gamesThere are also 12 mini games that include fetch, pet wash, piñatas bubble dodge, dressage, teaching tricks, grooming and much more. We’ve only begun to tap into the game. One thing that frustrates them is that some of the game is locked, they don’t understand yet that they have to earn jewels to pay for the unlockable new games to play. But we’re getting there, remember Miles and Zoe are ages 3 and 4 and this game is rated E for everyone it’s just that the Kinect can be frustrating for little ones with little patience and attention spans. That said, They LOVE Fantastic Pets

Now, I wanted to take a video of Zoe actually playing the game, but she flat out told me no, and I do have to respect her opinion, plus making a child do something just turns into a disaster and it looks like she’s not enjoying something when she really does love this game. It’s a perfect rainy day active option.

As a mom trying to keep her kids as active as possible I really appreciate Fantastic Pets because it makes them move quickly to achieve different goals with their animals. Some of the kids Kinect games we have don’t require them to actually get very active. So we’re pretty pleased with Fantastic Pets.

Final Organic Challenge: You Are What You Eat Giveaway

Summer and I have been participating in an Organic Challenge, and well honestly, she’s been doing most of the work. I LOVE you Summer truly I do!! I haven’t participated as much in the forum as I should, because it’s a wealth of organic information just waiting for all of us. 4/20 CHALLENGE: You are what you eat – so what are you eating?

Our modern diet is more complicated than ever before. More and more families are choosing natural and organic foods to protect their family’s health. You can too by taking simple steps.

Your challenge: Spend a few minutes this week learning about your food. Read a label!

Directions:

Pick at least one convenience food your family often eats.

Read the entire label. What health claims are being made? Do you know what they mean? What are the ingredients? Do you recognize them?

Next time you’re at the store, look for a product that has the USDA Organic Seal. What are the ingredients? Do you recognize them?

I am a label reader. I like to know what’s in my food and I chose whether or not I want to purchase what’s inside my food. I even read the labels provided in the books are my deli counter and bulk food bins before purchasing new products. When I first started it took a lot of time. If you’re just now starting to read labels, I recommend going to the store later in the evening without your children. There are fewer shoppers and fewer distractions, so it’s easier to have your cart sit in one place while you have 2 or more processed foods off the shelf and in hand for comparison.

My choice for this project was macaroni and cheese. This is one of the major processed food we purchase often and in bulk. My kids love it so much we purchase mac and cheese from Costco. Costco use to carry the Annie’s Classic Mac & Cheese, but my local Costco store no longer carries it so we’ve started purchasing the Kirkland Signature brand over the alternative offered at Costco, Kraft.

The first thing I inspect on a label is the ingredients. I don’t like fully or practically hydrogenated oils also known as Trans Fats. I also don’t like high fructose corn syrup also known as corn sugar. I prefer foods without dyes, added color, or flavors (unless done so naturally, which is listed on the label). Those rules stand firmer when I’m purchasing for my kids.

The ingredients:

Kirkland Signature – ENRICHED MACARONI PRODUCT (semolina (wheat) flour, wheat flour, niacin [vitamin B3], iron (ferrous sulfate), thiamine mononitrate [vitamin B1], riboflavin [vitamin B2], folic acid [vitamin B9]), WHEY, NONFAT MILK, RICE FLOUR, PURIFIED SEA SALT, WHEAT STRACH, NATURAL FLAVORS, CITRIC ACID, CHEDDAR CHEESE (pasteurized milk, cheese cultures, salt, enzymes), SOYBEAN OIL, PAPRIKA EXTRACT (color), TURMERIC EXTRACT (color).*

Annie’s – ORGANIC WHEAT MACARONI, CHEDDAR CHEESE (cultured pasteurized milk, salt, non-animal enzymes), WHEY, BUTTERMILK, SALT, CREAM, NATURAL FLAVOR, NATURAL SODIUM PHOSPHATE, ANNATTO EXTRACT (for natural color).**

Kraft – ENRICHED MACARONI PRODUCT (durum wheat flour, wheat flour, niacin [vitamin B3], ferrous sulfate, thiamin mononitrate [vitamin B1], riboflavin [vitamin B2], folic acid [vitamin B9]), CHEESE SAUCE MIX (whey, milkfat, milk protein concentrate, salt, calcium carbonate, sodium tripolyphosphate, cantains less than 2% of citric acid, sodium phosphate, lactic adic, milk, yellow 5, yellow 6, enzymes, cheese culture).***

Further ingredient investigations:

What are semolina and durum flours? Semolina (Triticum Durum) is not truly a grain, but is the milled endosperm of Durum Wheat. Semolina is most commonly used in the manufacturing of pasta. Semolina is high in Gluten therefore, it is high in protein.[1]

What is sodium phosphate? Sodium phosphate is a generic term for the salts of sodium and phosphoric acid.[2]

What is calcium carbonate? Calcium carbonate is a chemical compound. It is a common substance found in rock in all parts of the world, and is the main component of shells of marine organisms, snails, pearls, and eggshells. Calcium carbonate is the active ingredient in agricultural lime, and is usually the principal cause of hard water. It is commonly used medicinally as a calcium supplement or as an antacid, but excessive consumption can be hazardous. [3]

What is sodium triphosphate? Sodium triphosphate is an inorganic compound. It is produced on a large scale as a component of many domestic and industrial products, especially detergents.[4]

What is Yellow 5? Also known as tartrazine. A study commissioned by the UK’s Food Standards Agency found that when used in a mixture of other preservatives, increased levels of hyperactivity in children were observed. Many foods contain tartrazine in varying proportions, depending on the manufacturer or the cook in charge, although nowadays the trend is to avoid it or substitute a non-synthetic dyeing substance.[5]

What is Yellow 6? Also known as Sunset Yellow FCF. Yellow 6 is a synthetic yellow dye, manufactured from petroleum. Although there are reports it can induce an allergic reaction, this is not confirmed by scientific research.[6]

The claims:

Kraft – “Good, sharp cheddar cheese; Mixed with macaroni and browned lightly on top; Golden rod powder sauce mix” “Now even cheesier! That’s why more kids and moms love the one in the blue box. Right down to the bottom of the bowl.” ***

Both Annie’s and Kraft offer whole wheat and organic options in addition to other dietary options such as Annie’s makes rice noodles. For this review and research I have basically compared parallel products.

For my own family we’re going to convert to homemade versions and buy less Macaroni & Cheese in bulk boxes.

I hate doing this to you guys, but sometimes, I just have to……

It’s a not-so-wordless Wednesday this week. One I had to make sure you all could see just how adorable he is:

This costume came from HalloweenCostumes.com, and it’s perfect! I went to their website, picked out his size range and I’m so surprised at what a big hit it was. It’s actually a clone trooper, for those of you that are Star Wars buffs like we are. Miles LOVES stom stom’s as he used to call them. Now he almost always says Storm Troopers, and I was worried that he would know the difference, but he doesn’t care. Does this look like a child that cares?

HalloweenCostumes.com has a large collection of Halloween costumes and accessories for babies, toddlers, kids, teens, and adults. This Star Wars costume is one of many licensed movie costumes they offer. Their kids costumes are great for Halloween, but are just as fun for year-round creative play.

The kids have been having so much fun with their creative play lately. I love listening to their conversations. We were at Jump Planet the other day and they were pretending to be Rapunzel and Eugene together. It was So stinkin cute. Anyways, I know Zoe is dying to have the Princess Lea costume now, so she can match her brother and still be a princess. It’s all about the princess’ for her.

Of Course, She’d be happy being a storm trooper too!

Earth Day Sid The Science Kid Going Green DVD Giveaway

It’s Earth Week, and yes I missed the boat, it started on Monday, or Sunday, not entirely sure. According to Sid the Science kid and his Earth Day week it started on Monday. Sid has a great way of putting things we may think of as difficult to explain to children in their terms. They find that if Sid can do it they can do it. We were watching the episode about when the air gets dirty. It started off with Sid’s dad painting and using a mask so he was protected from the fumes. Sid was confused because he couldn’t see the fumes, which is a true statement. How do we know when the air is dirty when we can’t see it. So Miles was pretty interested in learning as he watched Sid learn about air pollution.

Sid the Science kid going green will help you teach your children four different areas on how to keep our beautiful earth clean all year round.

At school, Sid and his friends discover that people and animals on Earth need to breathe clean air, and when we pollute the air around us, it affects the air that everyone breathes. The kids also discover that trees have a really important role in keeping our air clean!

208:  “Reused Robot” Sid’s toy robot is broken, so he wants to throw it "away." Sid’s Mom tells him there is no such thing as "away," and when we put something in the trash, we are actually creating waste.  Sid and his friends explore the idea that everything we throw away goes somewhere.  This leads to an investigation of how to recycle and reuse items so that we make less trash.

While Sid and Dad are surveying the land, Sid notices a big stump teeming with little creatures! During a special field trip to The Science Center, Sid and his friends discover that there are animal habitats all around us, even in old stumps, and if one habitat is destroyed, all of the other habitats and animals are affected.

LaRue Across America Book Review and Giveaway

Spring Break passed and now Summer is on it’s way bringing thoughts of traveling. I love to just get in the car and drive long distances. I think I’m the only one in the family that likes it, most of my family would just prefer picking a destination and getting on an air plane. Well Ike, Mrs. LaRue’s dog would prefer to take his vacation on a boat in LaRue Across America: Postcards From the Vacation (LaRue Books) . Ike and Mrs LaRue had made plans to take a cruise when her neighbor Mrs Hibbins falls ill. Then Mrs. LaRue offers to take care of Mrs. Hibbins cats while she’s in the hospital but the captain of the boat will not allow cats on his boat so, they decide to take their vacation across the U.S. by car. It’s a ROAD TRIP. Ike is devestated and quickly starts writing letters and sending them at every stop begging Mrs. Hibbins to rectify the situation.

As soon as we got this book Zoe got her dad to read it, now he looked at the pages and said this may take us a few days to read, but as he got to reading it he realized that it was an easy read for the kids to sit through. Both of them enjoyed it and I even heard daddy laughing as he read it. LaRue Across America is great for kids and adults alike.
