Strawberry Jell-O Pretzel Salad Recipe

I’ve been eating this “salad” (which is less like a side dish and more like a dessert) since I was about 6 years old. My mom and I first had this at a Mother’s Day potluck tea at our church. My mom got the recipe from the maker, and she has been constructing this dish almost every holiday that I can remember, especially in college and beyond if it was a holiday I come home. The dish is tasty and one of my favorite recipes.

However, I “ignore” the ingredients as I’m not a fan of Cool Whip’s Practically Hydrogenated Oils and Jell-O’s added dyes. I have tried making this recipe with whipped cream instead of Cool Whip, but it has not successfully worked for me. If you’re up for a challenge attempt this recipe using real whipped cream and then let me know how you did it! I might try adding gelatin to stiffen up the three cream ingredients while using real whipped cream.

INGREDIENTS:

LAYER ONE
2 cups crushed pretzels
¾ cup butter, melted
3 tablespoons sugar

LAYER TWO
8 ounces Cool Whip, room temperature
1 cup powdered sugar
8 ounces cream cheese, room temperature

LAYER THREE
2 cups boiling hot water
1 – 6 ounce package of Strawberry Jell-O (not sugar free)
2 – 10 ounces packages of frozen strawberries OR 1 pound sliced fresh strawberries

DIRECTIONS:

1. Preheat oven to 350oF. Grease an 9×12 clear glass dish.

2. LAYER ONE – Mix well the pretzels, butter, and sugar. Press layer into pan. Bake layer in preheated oven for 9-minutes. Allow to cool completely.

3. LAYER TWO – Whip together Cool Whip, cream cheese, and powdered sugar. Spread on top of cooked pretzel mixture.

4. LAYER THREE – Mix boiled water, Jell-O and strawberries. When it starts to congeal pour on top of cream cheese layer. Pour on and spread GENTLY.

5. DO NOT MIX!

This is a recipe you can make a day in advance so if you’re looking for a dish to take some where or need an extra holiday dish, make this in advance and bring it out then it’s go-time. The cooking of the pretzel layer really helps it keep crisp. On about day 2-3 the pretzel layer will begin to get soften and get soggy on about day 5, so eat up and share!

Creative Ideas with Nutella, Breakfast Should Be Fun

Being in a MOMS Club with over 50 members has quite a few advantages, and one thing I’ve learned is that Word of Mouth marketing works. If you can get a mom to buy or use your product and LOVE it, they will share it with everyone they know and whenever I have a house party, we talk about all kinds of things.

One of the topics of our recent house party was Nutella. Out of all the people I talked to about Nutella I only met one person that doesn’t like it, and I think it’s because he isn’t fond of Hazelnuts but everyone else I know LOVES Nutella. Me, I remember the first time I tried it. I was in college, can you believe, I never had Nutella until college? Well, I found that it was delicious, and the guys in the dorms, not only did they eat Nutella but they would often be known to combine Nutella with some stuff called Fluff.

IMG_9048My husband was looking at the nutritional information and Nutella is just as healthy as peanut butter and is quick and easy to use. It’s even great in recipes. My friend just made these Outside-In Strawberry Dippers and I made Nutella Pound cake (I’ll share the recipe soon) for our house party, and it was a big hit.

The theme of the Nutella Party was supposed to be all about breakfast. It’s quite important to start out your day and your kids’ day with breakfast. Eating breakfast has been linked to positivly benefiting cognitive functions related to memory, academic performance and school attendance. Skipping breakfast seems to cause increased snacking during the day.

IMG_9058Connie Evers, M.S., R.D., a registered dietitian and children’s nutrition expert says that “breakfast needs to be something families look forward to, rather than a stressful and challenging experience for moms and children.” Parents need to make sure that everyone gets up early enough for the whole family to have time to create breakfast and eat it. And she suggests (my biggest weakness here) that parents be a good example and eat breakfast too. My husband reminds me all the time how important it is for me to be a good example and sit down and have breakfast with the kids. It is true, if I have breakfast, I don’t need a snack before lunch. Nutella can be part of a balanced breakfast. Try using whole-grain toast, or whole grain waffles and instead of using syrup use nutella spread. Add some fresh fruit and 1% milk for a good balance of nutrition.

And I just had to add that My Princess had lots of fun helping me set up for the party!!

Organic Challenge Number 2: Invent a Snack Outside-In Strawberry Shortcake Dippers Recipe

Outside-In Strawberry Shortcake Dippers Recipe

Outside-In Strawberry Dippers

Though this recipe is simple, it does take time. I have been trying to keep my family’s food box-free by making everything fresh from whole ingredients at home. I avoid foods with High Fructose Corn Syrup or corn sugar, and Hydrogenated Oils for foods I don’t make myself (out of a box or processed foods).

If you’re looking for some simple short cuts try using premade dough that you can roll out and cut. Or for the dough you can use already shaped biscuit dough and use a serrated knife while the dough is cold and slice into thin circles.

However this is a fun recipe to let the kids help with as they can use the stand mixer, roll the dough, and cut the circles instead of just simply adding ingredient to the bowl. My 4YO even tried to help make the pockets, which is great for fine motor movement. I love cooking with my children; they get to learn more about me and I get to teach them lifelong skills that extend past the kitchen.

INGREDIENTS:
3 cups flour
1 egg
1 cup water, room temperature
½ teaspoon salt

DIRECTIONS:

1. In your Kitchen Aid stand mixer with the Dough Hook attachment place flour and salt in bowl. Begin to mix on the STIR setting.

2. While mixer is stirring, add ½ cup water slowly. Add egg. Add other ½ cup water.

3. Allow dough to stir until dough ball forms and is moist on the outside. Remove ball and discard ruminants in the bowl. Divide ball into quarters.

Filling

INGREDIENTS:
1 ½ pounds organic strawberry flesh, cut into chunks
3 full size honey graham crackers, finely crush

DIRECTIONS:

1. Gently stir strawberries with graham cracker crumbs.

Dip

INGREDIENTS:
½ cup heavy whipping cream
1 tablespoon Nutella (or as desired)
1 tablespoon sugar

1. Combine all ingredients and whisk together using Kitchen Aid stand mixer with Wire Whip attachment until thick. Keep refrigerated.

Construction

1. Flour a clean counter top and roll out 1 dough quarter to 1/161/8 inch thickness. Flour surface and rolling pin as needed.

2. Use biscuit cutter (or 8oz glass inverted) to make dough circles.

3. Fill dough with about ½ tablespoon of strawberry filling. Fold circle in half around filling (taco style).

4. clip_image010Pinch edges firmly together sealing filling inside dough.

5. Repeat 1-4 until dough is gone.

6. Completed Outside-In Strawberry Shortcakes should be stored in-between towels to prevent drying while constructing (and cooking) other pockets.

 

Cooking

1. Bring a 5 quart pot of water to a rolling boil.

2. Place 7-10 Outside-In Strawberry Shortcakes into the water.

3. Remove with slotted spoon when floating (about 2-3 minutes).

clip_image0124. Place Outside-In Strawberry Shortcakes to towel to dry water off the exterior.

5. Place cooked pockets into a boil and drizzle with 2 tablespoon of butter (or as needed) to prevent sticking. Gentle stir or swish Outside-In Strawberry Shortcakes to evenly coat all pieces.

Outside-In Strawberry Shortcakes are best served a little warmer than room temperature so the butter is not congealed on the cake.

Yields about 4 dozen at 1/8 inch dough thickness

Teaching Tips Sorting A Skill for Preschoolers, Kindergarteners, and Beyond

I’ve officially been a stay at home mom for almost 9 months and I have to say that I feel so lucky to have the chance to do this. I know there are other moms out there who would love the chance to stay at home and take care of their little ones, but can’t for a wide variety of reasons. Now, that’s not to say that there aren’t days when I really miss what I like to refer to as “my past life.” Before my current career, I was a teacher. I worked primarily with kindergarten, but spent a lot of time working with students through 8th grade. My little guy is only 9 months old, so I haven’t really been able to get my “teacher fix” through him… YET! We’ve had a variation of centers at home, and there are enough children’s books to begin a small classroom library. Anyway, I’ve really been going through withdrawal lately searching for some outlet for all of the great ideas that I used to be able to implement in the classroom. I’m hoping that you will get some benefit out of this. I might be out of the classroom, but I’m hoping I can bring a little bit of the classroom to you. I’m hoping to bring you small, easy and simple ways to help your little learners.

Sorting Rings

Sorting: A Skill for Preschoolers, Kindergarteners, and Beyond

Did you know that most states require that kindergarteners be able to sort shapes objects according to a rule? It is a common standard that kindergarteners are expected to meet. This may sound simple, but for some kids it can be kind of tricky. You might have a kindergartener struggling with this skill, or have a preschooler ready to tackle it head on. Either way, here are some helpful ideas on how to help your child become a stronger sorter.

At home, there are tons of items for your little one to sort. ANYTHING can work: coins, buttons, blocks, bowls, or even the toys that haven’t been put away yet. Maybe your kids will even sort their trail mix at snack time! Do you have a junk drawer that needs some work? Stick some little hands on it with a mission. Sort that stuff! Since I think most people probably have some type of Legos hanging around their house, we’ll go with that. Just know you really could use anything.

Begin by working with your little sorter to sort the blocks by a simple characteristic, like color. Put all the yellow ones in one pile, red in another, and blue in another. Let your child keep it going. Then ask if your child can sort the blocks in another way (maybe by size). If this is easy for your child, ask them to create their own sorting rule. You can also play a game called “How Did I Sort?” In this “game”, someone would sort the blocks (or coins, or noodles, or buttons) in a certain way (maybe by size?), and then someone else would try to guess the sorting rule. It sounds pretty simple, but it can keep a little one busy doing something non-destructive… and isn’t that usually the goal?

You really don’t need any special supplies to play “How Did I Sort?” but if you feel the need to get more stuff in your home I’ve given some links for products that schools often use to practice sorting. The first are called attribute blocks. The second link is to a giant bucket of buttons. These can be pretty fun for sorting because you can even get really tricky and start sorting by the number of holes in the button! I know… you can tell I taught kindergarten. I’m excited about buttonholes!

Organic Challenge–Saving Money Cutting the Budget Results

Save a dollar here, Shift a dollar there!

My husband and I have been working on our budget anyways and cutting things out is HARD!!!

organic groceriesI’m drinking maybe one or two cups of coffee every day instead of four or more. The price of creamer has really gone up lately, but so have a lot of groceries which is why I use a lot coupons. Not to mention that I don’t go to Starbucks or Tully’s anymore. Today proved to be quite challenging because I decided to meet someone at Tully’s and it was SOOOOOO hard to not purchase a mocha, but I did it and that’s five bucks still on my pocket to spend on something more important. So it’s little things like this that add up and could help you spend that money on organic products if that’s your choice!

Did you know how many different resources there are for organic coupons? I was reading my friend Kristin’s blog and she has a huge list of Organic Food Coupons and places to find coupons for organic products. I have a few organic coupons that I’ve received here and there. If you ever go to a Taste of (insert your cities name here) they will usually have organic companies there too and then you will find coupons to local organic companies and you can save, and try them. Anyways, I was so impressed with Kristin’s great organic coupon finds.

You could always consider giving up cable if you have it. Can you imagine what you could do with an extra 100.00 a month that you may now be using on cable. We don’t have cable and haven’t had it for almost four years. Anything that I want to watch, I actually watch on Hulu or fancast. I really don’t have a lot of extra time because right now I’m using all my extra time to find ways to earn money on-line through my website or by selling stuff. If eating organic is really important to you, you might also consider not eating out. We decided that if we do go out we’re going to limit it to 50.00 per month which means only once a month, but we’re also considering now eating out at all.

I know some of these things I’m suggesting that you do are on the huge side, but it just depends on what’s important to you in life. Is it important to eat organic, then you’ll find a way to save in order to do so!

RIO: Original Motion Picture Soundtrack Giveaway

Ice Age was a huge hit in our house, the makers of Ice Age created a new colorful animal movie that hits theaters April 15th, RIO. Rio is a comedy adventure about living on the wild side. For Blu, a domesticated Macaw who never learned how to fly, living on the wild side is well wild. Not long after they arrive, Blu and Jewel are kidnapped by a group of bungling animal smugglers.  With the help of street smart Jewel, and a group of wise-cracking and smooth-talking city birds, Blu escapes.  Now, with his new friends by his side, Blu will have to find the courage to learn to fly, thwart the kidnappers who are hot on their trail, and return to Linda, the best friend a bird ever had.

Creating A Healthy Home Filtrete’s Clear Advantages

Personally, I work very hard to keep our home healthy, and I try to keep it healthy in many different ways. Yes, I want to keep my family mentally healthy but I also scour all of the surfaces for germs and we try the best we can to fight allergens. A – Avoid. For me one of my largest allergens is dust pollen that lives outside. So I have to stay out of the garden even though I love gardening. A good tip is to do just that, whenever possible, avoid irritants that trigger your allergies. Some easy ways to avoid a few of these allergens could be as simple as not using down pillows or blankets. Also you can cut down on allergens by using hypoallergenic pillows on your kid’s beds and limit their exposure to perfume, talcum powder, hair spray, air fresheners, fabric softeners or other strong odors or sprays. Strong fragrances and odors may aggravate allergy symptoms.

B – Balance. Have a balance in your home. One thing that was listed by Dr. Alanna that we do in our house is we keep the windows closed. By keeping the windows shut and the central air conditioning on during high pollen season children are protected from pollen particles that trees, grasses and weeds release into the air. All of these pollens and particles have been known to cause eye, nose, and airway allergy symptoms to arise. A tip I’ve never considered was giving children washable, non-allergenic stuffed toys when possible. 

C – Change. Change your filter every three months using a high performance filter, you might even want to find an allergen filter like the one that Filtrete makes, the Filtrete Elite Allergen Reduction Filter from 3M. Also consider changing things that are often neglected. For instance change the leaky faucets, pipes and other high moisture areas that are common places for mold growth. We have to stay on top of moisture living in the Pacific Northwest. I mean it rains almost every day.

I do use the on-line resources from time to time, but honestly most of my shopping is inside the stores. I look for organic products, and things that are “low in fat” for my families health. We really try to eat healthy and I love how the green signs are easy to notice, clean and very attractive. I need things really simple when I’ve got two kids, and we’re getting through the grocery store as quickly as I can.
