Orange Cinnamon Rolls Recipe

After enjoying a few recipes from the KitchenAid Recipe Collections Cookbook we decided to try our hand at the Orange Cinnamon Rolls Recipe. My husband made them early on Saturday morning, using the bread machine to kneed the dough, and what a perfect creation for breakfast. These Orange Cinnamon Rolls were gone in a day and a half, I’m surprised we had that much resistance as they were delicious. I hope my husband makes them again soon.

Ingredients:

Dough:

1/4 cup warm water (100 degrees to 110 degrees)
1 package (1/4 ounce) active dry yeast
1/2 cup fat free milk
1/4 cup granulated sugar
2 tablespoons butter, melted and cooled
1 egg
1 teaspoon vanilla
1/2 teaspoon salt
2 1/2 to 2 3/4 cups all purpose flour divided

Filling:

1/3 cup granulated sugar
1 tablespoon grated orange peel
1 teaspoon ground cinnamon
2 tablespoons butter, melted

Glaze:

3/4 cup powdered sugar
1 to 2 tablespoons orange juice

Directions:

To prepare the dough, but all of the wet ingredients including the egg into the bread machine first. Then place the flour, salt, granulated sugar in the bread machine. Next make a small indention for the yeast and set the bread machine to dough and your good to go.

If you want to make them by hand follow these directions.

Combine water and yeast in a large bowl and let stand 5 minutes, stirring until yeast dissolves.

Then whisk the milk, 1/4 cup granulated sugar, butter, egg, vanilla and salt in medium bowl; add yeast to mixture. Add 2 1/2 cups flour and stir until soft dough forms. Then knead the dough until smooth and elastic, about eight minutes (which is why I suggest using the bread machine). Keep slowly adding flour until it is no longer sticky.

Place the dough in a large bowl sprayed with cooking spray, turn over to coat all the dough with spray. Then cover it with a towel and let it rise in a warm place for about an hour or until it has doubled in size.

Now you can make the filling. Combine 1/3 cup granulated sugar, orange peel and cinnamon in small bowl. Coat 2 (8 inch) round cake pans with cooking spray. Divide dough into 2 portions. Working with 1 piece at a time, roll dough into 12 x 8 inch rectangle. Then brush with 1 tablespoon of melted butter. Sprinkle half of filling mixture over dough. Roll up longwise into a jelly roll. Cut into 12 1 inch slices and arrange in the cake pan. Then repeat with the other half of the dough.

Next Cover the dough and lit it rise in warm place for about 1 hour or until doubled in size.

Preheat oven to 350 degrees. Uncover dough and bake for 18 minutes to 20 minutes or until rolls are golden brown. Then let them stand for 5 minutes on a wire rack to cool.

Prepare the glaze by combining powdered sugar and 1 tablespoon orange juice in a medium bowl. stirring to mix. Add remaining orange juice as needed only a few drops at a time until the mixture is easy to drizzle over the orange cinnamon rolls. Serve warm.

1) I think I’ll be running around like a mad mom in a minivan

2) I love cheese burgers, cheddar everything except onions, I don’t like American cheese, and I like mushroom and swiss too.

3) Gas prices are a a pain in the but. They are about 3.56 or at least they were on Monday, they could be higher now. Supposedly they are supposed to level out soon. I’m really hoping so because my budget can’t afford much more.

Memories at Grandmas with Angie: Betty Jean Hamburger Soup Recipe

I have been blessed to have many great women in my life. I have had my mother and three of my own grandmothers and then when I wed my husband 24 years ago his family became mine as well. Today I want to share a bit about one of my husbands grandmothers and a favorite recipe of hers.

Betty Jean was her name and let me tell you this bean pole of a lady stood nearly 6 foot and was a strong as they came She raised a handful of children (I believe 5) on her own and then took in any child that just needed some love. My husband was one of these individuals that she took in. Roy P was what she called him if you are a Dukes of Hazard fan it won’t take you long to figure out where that came from. It always seemed that Betty had something good on the stove cooking but also always had something in the fridge that she had just made or some makings for a sandwich of some sort. One of her favorite recipes was a hamburger soup that would fill you up quick.

Betty Jean Hamburger Soup

1 lb lean hamburger
2/3 cup diced celery
1 bay leaf, crushed
dash of cayenne pepper
1 cup diced onions
1 cup shredded cabbage
1/2 tsp thyme
1 1/2-quarts water
1/2 cup cubed raw potato
8-oz can tomato sauce
2 tsp salt
1/2 cup frozen peas
1 cup sliced carrots
1/4 cup raw rice
2 beef bouillon cubes

Brown hamburger and onion in Pam sprayed soup pot. Brain off all fat. Add potatoes, carrots, celery, cabbage, water and tomato sauce. Bring to a boil. Add remaining ingredients, except peas. Cover and simmer 50 minutes. Add peas and cook another 5 to 10 minutes. Put into soup bowls and sprinkle with grated Parmesan cheese.

The Very Hungry Caterpillar Day at Pottery Barn

One of my favorite books to read to the kids is Eric Carle’s “The Very Hungry Caterpillar”. Zoe and Miles have been less and less interested in it but I get excited when they find it after a while and ask me to read it to them. The Very Hungry Caterpillar has been making its mark in as a beloved character cherished by moms and toddler’s alike for generations.  So when I found about about the 3rd Annual Very Hungry Caterpillar Day, celebrated on March 20 I had to let all of you know about it.

The Hungry CaterpillarThis year, the Very Hungry Caterpillar will be partnering with Pottery Barn Kids for some very special mommy and me time. On Sunday, March 20 from 12 p.m. to 2 p.m., all Pottery Barn Kids stores will be hosting a series of free activities for families, which will include story time and a reading of the Very Hungry Caterpillar and his adventures into becoming a butterfly. There is a Pottery Barn Kids located in Bellsquare Mall in Downtown Bellevue for one. I think there is one in University Village too, but you should check to find a local Pottery Barn Kids for your area to be sure!

I hope you find this event as special as I do and encourage you to share it with other moms to attend this event and celebrate Very Hungry Caterpillar Day by letting their child experience one of the greatest childhood classics of all time.

Interview with Christine Coppa Nutrition Picky Eaters and Yoplait Kids

Nutrition and my kids are two things that are constantly on my mind. Feeding my kids nutritiously takes creativity and constant diligence to make sure that what they eat is healthy for them and healthy for me, my biggest influence over them is my example. Thanks to Yoplait Kids, I had the opportunity to interview Christine Coppa, Editor at Parenting.com, and we talked about challenges with feeding kids from picky eaters to big time snackers.

In the first question, I wanted to know why Christine Coppa was working with Yoplait kids. Christine is a very well known blogger, and expert at Parenting.com. She often talks about nutrition and taking care of her own 3 year old son. Having a lot in common with Christine, I felt connect to her responses and feel that feeding kids healthy options is easier than it sounds. Yoplait makes low fat yogurt the common choice with kids with fun Cars, Disney Princesses and Dora packaging. Christine is a good fit because she already feeds her kids Yoplait and eats it herself as well.

Christine’s number 1 snack tip is to let the kids be in the driver seat. By keeping healthy snacks at eye level kids can go in and grab their own snacks. Have little containers of baby carrots, cheese sticks, and cherry tomatoes. Leave them on the bottom shelf for kids to find and get themselves, also have an area in the pantry of healthy non perishable snacks for them to choose from.

Be creative with picky eaters. My kids are addicted to dipping. Try using yogurt as the veggie or fruit dip, making a healthy wholesome fun snack. Also, try creating a kabob, use a wooden skewer and put veggies and fruit on it. Let them help in the preparation and encourage them to dip those kabobs right into yogurt. If you have trouble like me, with kids that want to eat all the time. Christine suggests using a schedule and distraction to make them think about food less often. We all eat when we are bored and if they are constantly doing something they won’t think about food as often. Also, remember that your example is the biggest influence on your children. My kids eat salads, raw carrots, and lots of fruit because they see Andrew and I doing it too!

When you’re on the go, snacking can still be healthy, you just need to remember to think ahead. Keep non-perishable food in the car so you always have it. Remember to restock it and pack some yogurt in freezer bag. Or freeze the yogurt and grab it on your way out then it will be soft for you to eat later.

My Review:

I have sensitive skin and it is dry during the winter time. I also have some weird unexplained allergy to some chemical. I haven’t been tested so I have no idea what it is. I thought it was dust because every time I clean I get this itchy red skin. Well, after reading about chemicals in products and how they affect people I began to realize it could be the chemicals. I recently tried Vaseline’s New lotion line and it made my skin incredibly itchy. I had to run my hands under cold water for ten minutes before they stopped itching. Well, Skin MD Natural does not make me itch and I like the smell of it. My hands feel soft after regular use, just a few days actually. And it is very rare that I can actually use a lotion for more than one application. Most eventually make me itch.

I love to eat, I just adore trying new foods. I find it fun and exciting. Buitoni Pasta Chicken & Mushroom Ravioli with Marsala Wine Sauce was mouth watering from start to finish!

But my son worked me over pretty hard for a sample because he like me, loves to try new foods. The Chicken & Mushroom Ravioli with Marsala Wine Sauce was really good. I thought it would have been better without the sauce, but I did really enjoy all of the mushrooms in the sauce, so it’s almost a toss up on how it would be perfect. Interview with Dr. Sears Healthy Habits Start Young Family Essentials

Dr. Jim SearsThis past week I had the opportunity to sit in on a conversation about children’s health with nutritional expert Dr. Jim Sears. Dr. Sears has really great advice on taking care of kids nutrition and activity levels that hit home with me and my own kids.

I don’t discuss this very often on my blog because I don’t want anything I say to be misconstrued, or for my children to read later on and have a low self esteem. But for this post I want to be completely honest in hopes that some other parents can benefit. 20 % of preschoolers are overweight and 11% are “over fat” which means that they have no muscle on their bones. My own children have BMI’s that are not in the healthy ranges, but we’re making progress (enough progress that our doctor is happy, which makes me happy). The key for us is that we need to increase our level of activity, because I’m like a DRSFE3hawk when it comes to my kids eating healthy. People automatically assume that I don’t feed them properly but I work very hard making sure that they snack on fruits and veggies. I need to focus my energy on exercise because food is only part of it. But before I get on my soapbox defending myself, let’s go into the detail on how to have healthy weight children.

Teach your children how to feel full! My own daughter has a terrible time knowing when she is full. So I’ve been telling her that she can have carrots if she is still hungry. Dr. Sears reminded me that it takes 20 minutes for your stomach to send your child the signal that they are done eating. So if you’re pretty sure you gave them a healthy serving, then distract them with a walk or a game of some kind. The best distraction would be some kind of active activity. Then if they are still hungry give them someone high in fiber and low in calories. My carrots as an all-purpose solution was not the best idea. My own doctor suggested that I offer her fruits and veggies that are high in water, like grapes and watermelon.

DRSFE4Teach your children how to make healthy food choices! I have never struggled with picky eaters, my kids eat everything. Most parents would love to have my problem, but it’s a slippery slope in either direction. Some parents wonder if their children are getting enough nutrients, while I’m constantly worried about how many calories they ARE getting. The solution, always provide healthy options. By giving them healthy options you are teaching them to make healthy options. Also, emulate healthy choices, your strongest influence over your children is your own behavior.

But he also has great ideas just for meal time. One encourage eating more often and smaller amounts, this is a valuable piece of information that has been echoed by other health experts that I’ve talked too. Large meals make you feel lethargic and eating more often jumpstarts your metabolism so it just makes sense to eat less more often. Just remember to keep those snacks and meals balanced. If you have picky eaters, try sitting down at the table with your meal, and give your child an empty plate. When they are ready to eat they will ask for the same thing you are having. At my house we have the rule, you eat what we eat or you don’t eat. It works for us.

Increase the activity level. This has been a constant struggle in our house. It rains from September through July in WA and even I don’t like playing in the rain, but I try to endure for their sakes. I also have children that do not want to exercise or play, walk or run. It’s very hard for me to make exercise fun. So this is what I try. Turn the TV off, kids should have only 1 hour or less of TV a day, which actually means, 1 hour of sit down time. So my biggest mistake is we don’t’ move enough as a family. One thing I’ve started doing recently, is if I’m just standing around or making dinner, I’ll start kicking my legs or dancing and Zoe asked me, “what are you doing mom” I responded, “I’m exercising”. Now I find that out of the blue she’s started doing it too. Which slapped me in the face with another dose of, they do what they see me doing.
