Sorry For My Absence….

I know most people don’t notice or care if I take a few days off, especially if it’s the weekend right?

My friends notice..so here is an update for them! (thank you Christine for asking)

Friday I was busy

imageWe found a new home for our dog Abby.

I cried and cried and cried and cried.

We had a Parent’s night out event, dropped off the kids for 2 hours and went out to eat together for the first time in almost five years. It was odd to sit across from each other and not have kids interrupting us. I think we need to find a regular sitter and do it again. Crazy talk right there, but we might just have to be crazy and spend more time together sans kids.

Saturday….

I was sick.

Cough, sniffle, more coughing. I went back to bed at 8:30 AM and pretty much stayed there the rest of the day.

Sunday

We went to church and the kids played outside. Visited with our lovely neighbors and enjoyed the lack of rain. I did a little blogging at naptime and then played outside some more. Now I’m exhausted and coughing up a lung so I’m going back to bed. I hope to get into a blogging routine sometime this year, I felt I was almost there last week, but about Thursday I felt like I was starting to fall back into the abyss. Hopefully, it was just me starting to get sick and on that note, really, I’m going to bed this time!

Valentine’s Day Gifts at the Disney Store Giveaway

Last week, I really needed to get out of the house so I took Miles to the mall. The first store I saw had dresses on sale for 7.99 and lower and I wanted to go in and they them on, well Miles had another idea. He wanted nothing to do with the dress store so we went walking in the mall. We walked past the Teddy Bear store (aka Build-a-Bear) and he had to go in. So, we went in there and I was ready to go. He didn’t want to leave, so I enticed him with words like Mickey Mouse, Buzz Lightyear and Cars 2. He said, ummm The Mickey Store?

Yes let’s go to the Disney Store…..

He jumped up so fast and said, let’s go mommy, come on!

We can’t have a family trip to the mall without visiting the Disney Store and what did we find, LOTS of cute stuff for Valentine’s Day.

Miles of course loved all of the Cars toys he found along with the new Woody, Jessie and Buzz Lightyear plush. Can a kid have too many versions of Buzz and Jessie?

Mickey and Minnie Mouse are as cute as can be with these soft pie-eyes gazing out at  you while holding a Valentine pouch that your loved one can put a special love note in for you to find. Valentine’s Day Mickey and Minnie Plush retail for 14.50. Dumbo can also be found in the Valentine’s Day plush set holding his own Valentine’s day pouch.

I love to drink coffee and I’m always looking at coffee mugs. So I was excited to see this pair of mugs for Mom and Dad with these Valentine’s Day Minnie and Mickey Mouse Mugs. By placing them side by side they create a picture with Mickey taking aim with Cupid’s arrow on one and Minnie is love-struck on the other. These are ceramic mugs that retail for 14.50.

Also merchandised for Valentine’s Day are Sweetheart Minnie and Mickey Mouse PJ Pal sets for girls and toddler girls. Each PJ set retails for 14.50. They are all-cotton and Disney authentic as they feature a pretty scallop-edged neckline accented with a satin bow. The contrasting cuffs and heart print pants make for pretty cute little girls PJ sets.

Celebrate Pound Cake Day on March 4th with Sara Lee S’mores Squares

IMG_8467March 4th is National Pound Cake Day and we’ve already started celebrating at our house. Now, March 4th may seem like it is forever away but time travels so quickly it will be here before you know it. In order to celebrate it properly, I felt we should show you how it’s done. First, you need to get your hands on some pound cake. We chose to use Sara Lee’s frozen All Butter Pound Cake that is ready in 10 minutes.

Then we used their S’mores Pound cake Squares and I varied in the directions just a little bit here and there but the end result was yummy, it was even yummier the next day. I would describe the next day as a delicious decadent chocolate cake doughnut with marshmallow crème. MMM.

S’mores Pound Cake Squares Recipe:

Ingredients:

1 Sara Lee® Frozen Pound Cake, thawed
2 cups miniature marshmallows (I probably only used 1 cup as I didn’t measure)
1 cup semi-sweet chocolate chips (I didn’t measure the chocolate chips so it was probably closer to 2 cups)
½ cup chopped peanuts (I didn’t use the peanuts)

Directions:

  1. Preheat oven to 400°F.
  2. Spray a 13×9-inch baking pan with no-stick cooking spray. Cut pound cake into 15 slices. Place in the bottom of a 13×9-inch baking pan cutting to fit, if needed.
  3. Sprinkle marshmallows, chocolate chips and peanuts evenly over pound cake.
  4. Bake for 8-10 minutes or until marshmallows are melted and lightly toasted.
  5. Cool; cut into squares.

I didn’t follow the directions. I cut the pound cake into squares instead of slices as you can see above. Then I baked those squares for 10 minutes. Then I placed those squares in a glass baking dish and I covered with a layer of chocolate chips and French Vanilla Marshmallows. Then I repeated the process until I used up all of the pound cake. I cooked for about 15 minutes because it took longer the way I had it layered for it to brown all the way.

If you follow their directions to the T I imagine you’ll have a much more photogenic S’mores Pound Cake Square than I do have pictured here. But in my book, looks are always deceiving as things taste much better than they look.

Mars Needs Moms Free Valentines for Valentine’s Day

Disney’s new movie Mars Needs Moms is coming to a theater near you in 3D March 11th, 2011.

Produced by the team behind “Disney’s A Christmas Carol” and “The Polar Express,” “Mars Needs Moms” showcases nine-year-old Milo’s  (Seth Green) quest to save his mom (Joan Cusack) from Martians—a wild adventure in Disney Digital 3D™ and IMAX® 3D that involves stowing away on a spaceship, navigating an elaborate, multi-level planet and taking on the alien nation and their leader (Mindy Sterling).

To begin the Martian celebration, Disney has created these free Valentines for your kids to use, so feel free to take these and print them on your printer. These are free Valentines for your kids to use on Valentine’s Day, and yep, that’s tomorrow friends.

I’ve already screened this movie and I can’t tell you any of the details about it. Except there is a boy named Milo who’s played by Seth Green, and he reminded me of Miles my own little red headed boy.

This purse by Ecoist is a very sturdy handbag made with candy wrappers and food packages, so it is a one of a kind green and eco-friendly bag. It’s great for taking out for a night on the town being small and easy to hold with a strap to wrap around your wrist. Ecoist partnered with MARS to repurpose their candy bar wrappers into something useful. I Love Jockey Sport Collection Review & Giveaway

I Love Jockey Sport, yes I really do. I’ve been living in my pants for the past month. They wash well, the wear well, and they are flattering giving me more self confidence and increased my activity out in front of other people because I’m comfortable with the way I look.

The Jockey Sport collection comes in three different pants. Here are the pants styles in order of my preference!

Modern Pant:

The Modern Pant is my favorite fit out of the three new pants made by Jockey in the Jockey Sport line. The Modern Pant fits comfortably at my waistline and still covers up my muffin top belly, they call this feature the flatlock. I just love that it’s not a tight feel. The flatlock works so well that my neighbor that I lost weight. The modern pant features a moisture wicking fabric blend that keeps you cool and dry. Of course since you’re going to be running, jogging or exercising in some form in these pants you’ll need the little zipper pocket in the back where you can hide the iPod. The Modern pants come in short regular and long.

Relaxed Pant:

In the Jockey Sport collection my next favorite pant is the relaxed pant. The relaxed fit hugs the tummy as well with the flatlock and wide waistband. The relaxed fit pants also come in short, regular and long lengths. The pants fit a little more snugly around the middle than the modern pants, but they are wider as they extend to your legs. This look makes women look longer and taller. I love to do Tai Chi and think these pants are perfect for it.

Performance Pant:

The Performance pant fits snugly around my rear and thighs. They are very flattering and make me feel a little self conscience only because I’m not crazy about that tight of a fit. They are still very comfortable and easy to move in so it’s not tight uncomfortable, it’s more of a tight sexy kind of look. The Performance pants have a 32 inch inseam with a flared leg. Flared legs also increase length in appearance. At least in my opinion they do. The Performance pants have a coin pocked in the front on the side. I think these pants would be good for Yoga!

Each of the Jockey Sports pants retail for about 60.00.

I also received the Active Tee with Pockets in Pink. They come in four different colors and pink is my favorite. The color is great and with the pockets it makes exercising without a purse easy.

Then to finish off the outfit I received the Zip Front Jacket. The Jacket completes the look, it’s comfortable with a lot of give and looks like it fits very tightly. It’s a very comfortable tight because it’s stretchy. It is the flatlock seams that make the jacket give you a flatter and slimmer look. There are dual front pockets with a full zip front and are best for medium impact activities. In other words very cute and comfortable to work out in or just run around the town. I’m often seen picking up my kids with my Zip Front Jockey Sport jacket on.

Tasty Treats Thursday S’more Cupcakes Please Recipe

I love to bake! In fact I do it each week for my husband’s team meeting at work. There is a group of about 6 of them, but I usually just bake one batch of whatever the recipes is that I’m making if it makes more than 6 servings. In the past I’ve made Margarita Cupcakes for my Roundabouts cupcake sleeve review and Diane Henderik’s Strawberry Cheesecake using Nature’s Path cereals. So I thought I’d share my love with you with Tasty Treats Thursday. If you need a treat for something this week, or there’s a school or church bake sale coming up then you can WOW them with something fun. Not everything I make is glamorous as I actually bake for me – just for the fun of it.

This week’s goodness is best served warm, but my husband’s colleagues had to deal with fresh made but reheated to desired temperature.

S'more Cupcake

S’more Cupcakes Please!

WARE

double boiler (I don’t have one so I used a bowl balanced on a pot … be careful if you do the same!)
4 – 4oz. ramekins
medium size mixing bowl
wood spoon OR rubber spatula
4 serving dishes
electric handheld mixer
piping equipment
plastic bag
(to crush graham crackers inside or 2 bags if you use a bag instead of piping equipment)
metal spoon
(I used the back to crush graham crackers, and the spoon to place them on the cakes.)

CHOCOLATE – from allrecipes.com is “Chocolate Cakes with Liquid Centers
This recipe makes four cakes. I had to make two batches to serve all 6 people – I’m not a fan of doubling recipes I’ve never tried in the past; so I literally made two batches.

½ cup butter
4 (1 ounce) squares bittersweet chocolate
(I used Kraft’s Baker’s chocolate which is what I had on hand in my pantry)
2 eggs
2 egg yolks
¼ cup white sugar
2 teaspoons all-purpose flour

1. Preheat oven to 450oF (230oC). Butter and flour four 4oz. ramekins or custard cups.

2. In the top half of a double boiler set over simmering water, heat the butter and the chocolate until chocolate is almost completely melted. (I don’t own a double boiler so I microwaved all if it for one minute and stirred, then a second minutes and stirred. Everything was all melted at this point).

3. Beat the eggs, egg yolks and sugar together until light colored and thick.

4. Beat together the melted chocolate and butter. While beating, slowly pour the chocolate mixture into the egg mixture, then quickly beat in the flour and mix until just combined.

5. Divide the batter between the four molds and bake in preheated oven for 7 minutes. The centers of the cakes will still be quite wet. Invert cakes on serving plates and let stand for 15 seconds, then unmold. (Typically you would serve immediately.)

MARSHMALLOW – I got a marshmallow tasting frosting recipes from a MOMS Club friend.

1 3/4 cups sugar
1/4 cup water
3 egg whites
1/4 tsp cream of tartar
1 tsp vanilla

1. Put sugar, water, egg whites, and cream of tartar in a heatproof container or on top of a double boiler and beat with electric mixer on high until opaque, white, and foamy, about 1 minute. (As mentioned, I don’t own a double boiler so instead I use a pot with a boil on top. If you too use this method because as it may not be sturdy.)

2. Put the bowl over, but not touching, a saucepan of barely simmering water or the bottom of a double boiler. The top container should sit firmly over the pan of hot water. Beat on high with electric mixer until frosting make stiff peaks that stand straight up when you stop the beaters and lift them out of the mixture, about 12 minutes.

3. Remover the container from the water, add the vanilla and continue to beat for 2 more minutes this frosting will become more firm as it cools on the finished cake.

GRAHAM CRACKER
My graham crackers aren’t homemade. I used La Panzanella Cinnamon Sweet Crisps which I love and buy in bulk from Costco. La Panzanella is local for me as they’re made in Tukwila, WA. I placed about 3 crackers in a Ziploc bag and crush to desired crumb size. I sprinkled them on top of the frosting as well as on the serving plate. I also garnished the top with a ½ La Panzanella Sweet Crisps.

I drizzled the plate with honey, as I typically used honey graham crackers in my s’mores, though this was more esthetic than for flavor.
