Tasty Treat Thursday Mini Banana Bread Muffins Recipe

I love making mini of anything! People seem to eat more. I think it’s psychological like they didn’t eat that much by just having one. “I just had one small muffin (or cookie). I can have another … and another … and another.” That means I have a lot less leftover, if anything at all. Then I don’t have to eat it; as you know I’m doing the 60 Day SlimDown and I need the extra pounds gone.

I personally LOVE this recipe because it’s not that bad for you; check out the ingredients:

WARE
medium mixing bowl
mixing spoon
mini muffin tin –
I recommend getting a commercial size tin (measure your oven first); this is on my “get” list.

INGREDIENTS
1 ½ cup wheat flour
¼ cup wheat germ
¼ cup ground flaxseed
½ cup quick oats
1 teaspoon baking soda
¼ teaspoon salt
1 teaspoon ground cinnamon
½ cup butter, room temperature or melted
¾ cup brown sugar
1 egg, beaten
¼ cup all natural Organic Tree Top apple sauce
2-3 mashed ripe Organic Chiquita bananas
optional – ½ bag mini chocolate chips
optional – ¼ cup coconut, sweetened or unsweetened as desired

DIRECTIONS
1. Preheat oven to 350oF (175oC). Lightly grease muffin tin.
2. In mixing bowl, combine all ingredients stirring until moisten. Fill greased tin cups ¾ full.
3. Bake in preheated oven for 10 minutes. Pull out of tin and allow to cool.

TIPS:
* If you’re using a mini muffin tin multiple times to complete the batch, clean and re-grease the muffin tin each time.
* I recommend using a baby bottle cleaner to get completely clean cups on your muffin tins.

Am I Wild Or Mild? Chili’s Shout Out To Eat Contest And Giveaway

chicken crispersYummm, just thinking of Chili’s makes me want to eat out tonight. I love so much on the Chili’s menu that I always have a hard time ordering. I love the Chicken Crispers, the Queso dip, the nachos and many of the appetizers. I love their salad and the list goes on an on about what I like to eat there.

But, just in case you liked the taste the way it was, the original recipes are still on the menu!

Oh how I envy all of my readers on this one. I would LOVE to try these new spices, I would even love to take my Milesman with me because he loves spice. When we go eat at a Mexican restaurant he eats the salsa, all of it. MMM. My mouth is watering at that thought of Jalapeno Chicken Quesadillas, and sweet Maple BB@ Chicken Crispers. Ohh, and I never thought they could make Chicken Crispers better. So I have to live through you guys. If you’ve tried it tell me all about it!

For My Sister Lindsey The Last Unicorn is on Blu-ray Happy Dance Vlog!

imageI had to write about this because this is my sisters favorite childhood movie. I had a love of Rainbow Bright, I had to have the movie and I had to have all of my toys back when I became an adult. Sad but true!

My sister had to find a copy of this movie on DVD (and I saw that she has it in her collection) and now that it’s on Blu-ray I bet she’s going to do everything she can to get her hands on a copy of it. That’s right, my sister pictured on the left with my daughter two years ago loves The Last Unicorn.

So I dedicate this video to her:

The Last Unicorn originally came out in 1982 which means she wasn’t even born when it first came out. So I’m really not sure when she fell in love with it, but there is something magical to us girls about unicorns, Mia Farrow and Angela Lansburry. Lionsgate Home Entertainment digitally remastered The Last Unicorn in 1080P high definition widescreen featuring the voice talents of Jeff Bridges (TRON: Legacy), Mia Farrow (The Purple Rose of Cairo), Angela Lansbury (Nanny McPhee) and Rene Auberjonois (The Little Mermaid). You may wonder what the movie is about, I bet I have readers that are too young to remember this movie at all. Oiy!

So you get the idea there is the last unicorn right, well this unicorn seeks out others like herself through a mystical land of talking cats and magicians. I her search for other unicorns, she encounters adventure and dangers that she never imagined possible. Throughout her journey she learns of friendship, love and something about herself which is a lesson we all need sometimes. I’m sure the musical composition along with the animation is part of what captured my sister’s imagination as a child. Hey, I have Rainbow bright so I can’t begrudge her The Last Unicorn right?

I never would have guessed that my most viewed article would be about free VTech V.reader books that you can download from Vtech.com. So since you guys really enjoy the V.reader, I wanted to share something else that’s free for our kids. The VTech V.reader app game for the iPhone is free.

When we received the V.reader from VTech it came with the book What’s That Noise. It’s about a dog that moved from the country to the big city and he had to learn to live with lots of noises. The kids loved listening to the story and playing the games. Now they read other stories that we have purchased over this past year.

Oh Gnomeo Gnomeo Why Did you Have to Be Blue? Gnomeo and Juliet Review

gnomeo and julietThe New Touchstone version of Romeo and Juliet, Gnomeo and Juliet came out over this past weekend and wow it was a hit bringing in over 25,000,000 at the box office in one weekend. Gnomeo and Juliet sings to children and adults alike. Being an animated feature, kids are pulled in with the cute garden gnomes and adults are pulled in with the promise of Elton John musical features and adult humor. I’ve seen Gnomeo and Juliet 3 times already I took the kids and invited friends from the neighborhood to see what everyone thought of the movie and I came out with two different perspectives to share with you about Gnomeo and Juliet.

From an adult’s perspective Gnomeo and Juliet is a fun fresh retelling of Romeo and Juliet. Touchstone and Disney retold this story without all of the teenage angst, sex, and drugs. I laughed at all the jokes and smiled for the majority of the movie. Using Gnomes, one of the least attractive icons we have to tell one of the most beloved loves stories known was quite a creative movie. Gnomeo is a blue gnome played by James McAvory that leads the Montague family in their war against those darn red Capulets. The movie begins with a lawn mower race where Gnomeo loses to Tybalt (Jason Statham). The Montagues demand that Gnomeo takes revenge and the night he sets out his plan is when he meets Juliet played by Emily Blunt and falls hat over heels in love with her. When Juliet and Gnomeo meet in their private garden, they meet the most curious of characters, Featherstone the Gnomeo%201pink flamingo, who helps to teach them what love truly is.  Of course, they are interrupted by the on-going feud when Tybalt crosses the line and Romeo feels the need for revenge. That’s when the accident occurs and things go from bad to really bad. Find out what happens next by going to see the movie for yourself.

Someone asked me if this movie is a musical? No, Gnomeo and Juliet is not a musical, but it does have music perfectly placed throughout the movie making it delightful to watch. The music was inspired by Elton John, many of the songs were new versions sung by other people and some were even quite under toned as lines in the movie. My favorite part about the movie was the music, I think it perfectly complimented all of the scenes.

G&JFrom my daughter’s perspective there was a little confusion. Zoe is 4 years old, didn’t want to wear the 3D glasses and on the way home from the movie she wanted to know who the bad guy was. I quickly thought of Tybalt as the bad guy, but my husband said they were all bad guys. All of the gnomes in Gnomeo and Juliet are angry vindictive people out to get one another. It wasn’t until they all thought Gnomeo and Juliet were gone that they decided to end the feud. Miles refused to wear his 3D sunglasses and said he didn’t like the movie at all, but he’s only 3 and any time he sees a trailer for the movie he says, Oh mom that’s Gnomeo and Juliet, and I never would have guessed that he could even pronounce such words. So for very young children, one the 3D is difficult for them to sit through. My other warning would be that it’s violent from a child’s perspective. Tybalt dies and I heard a child start wailing when we thought Gnomeo had died too. Now, quickly you will see that he’s alive, so I wasn’t too concerned about that scene at all. Of course, Zoe likes Juliet from a princess point of view.

Overall, I found Gnomeo and Juliet to be a great family film just not for any kids that are sensitive to fighting.

 

I was provided movie tickets for my family and I to see this movie by a local theater, I also was part of a Disney blogger trip where we previewed the movie and interviewed the cast. My opinions are my own.

Last Minute Tax Tips From Office Depot’s Finance Expert, Farnoosh Torabi

Taxes, taxes taxes, I’m almost done organizing all of my tax information how is your tax solution coming along? Good news is you have three EXTRA days this year to file, due to April 15 falling on a holiday in D.C. this year. Office Depot sent me some tips from Farnoosh Torabi to share with you. Remember I interviewed her a few weeks ago asking her how to organize my home home office and start getting ready for taxes. Be sure to check out my interview with Farnoosh Torabi, she provided great advice then and is still providing us with great tips with these tax tips here.

1.       File Online. Go green and save time and money. Choose from a variety of affordable online software to help you file your taxes [H&R Block At Home Deluxe & At Home Business] Note that taxpayers whose adjusted gross income was $58,000 or less in 2010 can file electronically for free through the IRS web site at freefile.IRS.gov.

2.       Boost IRA Savings. Contributing to a traditional IRA is one of the last ways to really reduce your 2010 taxable income before April 18.  You have until the very last day to contribute to this retirement account and deduct the amount from your taxable income. The dollar limit contribution for 2010 is $5,000 is you’re 49 or younger. $6,000 if you’re age 50 or older.

3.       Remember the Basics. Be sure to sign and date your 1040. Review your personal identification – social security, address, business ID (for business owners), etc.  

4.       Opt for Direct Deposit. Another perk to filing electronically is that if you’re expecting a refund, you can get your check sent directly to your savings account. And because you avoid snail mail you can probably get paid a week early.

5.       Add Up All Your Write-Offs.  Deductible expenses here and there can add up to big savings come tax day. Job hunting-related expenses such as relocation (50 miles away from current home), travel and meals, copies, faxes, are eligible for a tax deduction. Also, if you are self-employed you may receive deductions for insurance paid out of pocket and any self-employment taxes.  Don’t forget deductions for student loan interest and medical savings accounts, too.

6.       Make a Copy of Your Return. It will come in handy when filling out next year’s return. Plus if you apply for a mortgage or a refinance, banks will want to see your tax return.  Keep returns for an average 3 years from when it was filed, during which time the IRS is most likely to audit (if at all).

7.       Stay Organized. As soon as you’re done filing make sure you keep all your paperwork organized. Your return, your paystubs, your receipts, will all come in handy down the road if (and I hope this doesn’t happen) the IRS decides to audit your return or if there is a discrepancy between the IRS records and what you claimed and you need to prove that, indeed, you filed everything correctly. 

8.       Out of Time? Get an Extension. If you absolutely can’t make the April 18th deadline this year, you can request a six-month extension by filling out the IRS Form 4868.

I love roller coasters. The faster the better as long as they are made out of metal. Wooden roller coasters always give me a headache.

I’m not sure about what the nicest thing is that I’ve done.

I love my kids and family and my neighborhood. We live in the nicest neighborhood possible. Least, the rain!
