Tropical Traditions Coconut Flour Recipe #giveaway

Tropical Traditions sent me a package of their organic gluten-free high fiber coconut flour to review. It took me a while to get to this one but since it is the season of baking I finally decided to throw something together. What I did was a mistake. I didn’t even think that because the composition is different from regular flower that some conversions might be needed. I set out to make my banana muffins just by switching flower. It was a failure. The flower is just so thick, I needed to increase the liquid content and decrease the amount of flour used. With baking it is imperative that you follow directions.

Here is a recipe that will work using coconut flour:

Coconut Banana Muffins:

Ingredients:

Organic Coconut Flour photo1 cup organic coconut fl our
6 eggs
2 ripe bananas (mashed)
2 Tbsp. melted butter
2 Tbsp. Virgin Coconut Oil
2 Tbsp. milk
3 Tbsp. honey
1 tsp. aluminum free baking powder
½ tsp. vanilla
⅛ tsp. Himalayan salt

Procedure:

Pre-heat oven at 350 degrees F.
Mix coconut fl our and baking powder (put it in separate
bowl). In a mixing bowl, beat eggs gradually, and then add
milk, honey, coconut oil, butter, vanilla and salt. Continue
mixing. Then add the coconut fl our with baking powder and
mashed bananas. Blend well. Grease 12 muffi n cups with
coconut oil. Fill greased muffi n cups with the batter.
Bake at 350 degrees F for 20 minutes.
Yield: 12 muffins

Tropical Traditions organic coconut fl our contains over 19% non-gluten protein. Therefore, it can be added to shakes and smoothies where fiber and protein are needed. Or simply dissolve a spoonful in water as a high-fiber drink with a coconut flavor. This organic coconut flour is very versatile and very tasty. I covered my finger in the flour and ate it straight. It’s not bad. Sprinkle it over your favorite dishes to add a light coconut flavor or, use it as a thickener in soups and sauces. You can do quite a bit with it once you learn how much to use. (Less than normal flour)
